We cut the chicken up into bite size pieces and cooked it in a wok. Then cooked the baby bok choy without cleaning out the wok so it had the chicken flavor too. Once everything was done, we combined them and put them on some lime flavored rice. Next time I will skip the dipping sauce. We thought it wasn't really needed. I followed the recipe with only one substitution. I bought the natural peanut butter, but used the regular stuff I had on hand because we don't use enough to justify opening two at a time. We LOVED it. Served it with the Bok Choy featured on the show and fresh mango and cottage cheese for a salad. This recipe goes into my regular rotation. When I tasted the peanut sauce, I was worried it would have too much heat for me, but with the chicken, it was perfect. I didn't have any low sodium soy sauce, so used regular instead. Next time I will definitely use the low sodium. The peanut sauce is so rich and tastey, it's hard to believe it's not bad for you! (And it's tied for #1 overall with another recipe that takes far too much time and has too many calories/too much fat.) Perfect combination of flavors, just spicy enough for the whole family to enjoy. The marinade helped keep the chicken moist an added a great flavor. I confess that I have become lazy and just grill the marinated tenders rather than threading them on skewers (so I suppose it's not really satay) -- no one seems to care! I didn't skewer the chicken, because I don't have a grill, so I just used a handled grill pan and cooked them that way. I know, it's no longer really a satay, but the taste was all there. :-) The marinade was great, and the chicken turned out very tender. Thank you, Ellie! Don't know if that is because I used whole chicken breasts instead of cubes. The amount of chicken serves 2 people, not 4. I made half the sauce, and it was enough for 4 people. It was fabulous, with a few tweaks. For a whole recipe, I added an additional 2 TBSP broth and 1/2 TBSP brown sugar. I also added 3 TBSP of the light coconut milk as well. The coconut milk is really what the sauce needed (and makes it closer to the traditional). I decreased the ginger by 1/2 TBSP, and recommend considering halving the soy sauce. The finished product is a little salty, even with all the lower sodium products. This peanut sauce does not disappoint, so good you'll want to eat it plain!! Bok choi was just okay, mine was a bit "woody" and I thought the vinegar made it sour. But overall, chicken and peanut sauce was delicious! The peanut sauce has just enough of a "kick" to make it interesting but not too spicy. The marinade for the chicken is terrific--it seemed to make alot, so I marinated and grilled 3 extra breasts to have over salads for lunch. While I found the marinade to be a waste of time, the dipping sauce is terrific and simple to prepare. This makes for an easy supper, but also a great appetizer. Just use small strips of chicken on pre-soaked bamboo skewers, grill, and place 3-4 ramekins of dipping sauce around the table for a fun tapas style appetizer. My girlfriends couldn't get enough. I find that most just taste like peanut butter, but not this one! It was wonderful! I marinated the meat overnight and also made the sauce the day before. When I came home from work the next day, all I had to do was skewer the chicken and grill it on my Cuisinart Griddler. Super easy and super delicious! It was easy enough that my husband could make the marinade. I had leftovers so the next day I added the chicken to organic greens, cilantro, basil , cucumber and scallions and then thinned the peanut sauce with some rice vinegar and water to make a dressing- it was terrific. I'll be making this again. I do think the longer you can marinade the better. He ate this and loved it. He asked for some more to take home. I used the george forman grill and poured the sauce on it as it cooked so it got really brown and almost carmelized. Looked delicious and tasted great. The only reason it got 4 stars is b/c of the peanut sauce. I was not a fan of it. the garlic and onions really needed to be minced and crushed. I didn't have fresh basil or cilantro, so I just added dried cilantro (fresh cilantro tastes like soap to me, anyway). I also didn't have any brown sugar, so I used Splenda to save some CHO. The peanut sauce was especially good; even using the full amounts of the crushed red pepper flakes & red curry paste didn't make it too hot (as Thai Kitchen curry pastes tend to do, and that's what I had).
