(check out recipe for Tyler's Ultimate grits). I searved the leftovers the next day with brown rice and brussel sprouts to my friend and she thought it was the bomb. The flavor keeps well from one day to the next so its a great time saver. For authentic taste, celery is a key component to Swiss steak. If you use a slow cooker, remember that the newer ones cook hotter than the old ones did, so you can't leave beef in a slow cooker while you're at work for 9 hours, not even on low. It will become very dry (even if it's tender). It should cook for only about four-five hours. I used a good quality sirloin cubed steak that was naturally tender. I let it all simmer to marry the flavors, but you wouldn't have to if your meat is tender. You can brown the steak, stir fry the onions and peppers, add the tomatoes and you are done. I made it stove top. At the end I added a bit of red wine to jazz it up a bit. It was great, and I will make it again. I added the garlic powder to the flour then coated the meat. I substituted 1/2c of water with red wine (Cabernet Savignon)and used a boullion cube. I cooked this on the stove for 1.5 hours (like Paula did on the show) versus the crock pot so maybe that is why the sauce was much thicker and tasted GREAT over garlic mashed potatoes. The meat was very tender. Will make this again but will use much less oil. Instead of water I used beef broth and wine. I also used canned tomatoes with garlic and oregano. Pleanty of Flavor. I also added some mushrooms for additonal flavor and nutrition. So easy and so tender. make sure you ask the meat dept. to run your meat through the tenderizer or it will be tough! I didn't have the nice gravy either, my sauce looked and tasted like tomato water. I will give this recipe one more chance. Next time, I'll use filet mignon cut in cubes and I'll pound the meat just to be sure it's tender. I'll also use beef stock instead of water. If it still turns out bad then I'm done with this one. Also, it looked easy and quick to make. But in reading the reviews and being warned about its "blandness", I decided to jazz it up with mushrooms and wine. I added a small container of sliced mushrooms with the onions and pepper and replaced 1/2 cup of water with some good dry red wine I had leftover in the fridge. I simmer it for 40 minutes on the stove in a heavy dutch oven. I served it with brown rice (cooked in beef broth) and steamed broccoli. It was EXCELLENT! Next time I think I will use red peppers -- green peppers can be a bit over-powering sometimes. As I write this, the serving size pieces of round steak are floating in a whole lot of liquid for going on the third hour. The meat is tougher than horse hide. I got on the net to double check the recipe printed on the website. Yep, same as TV ---except I see- notice note -to ensure tenderness, it is necessary to have the butcher run the round steak through a cuber. WHAT?!?......... Did she say that on TV??
