I did not use a slow cooker to make this I baked it for 25 min at 325 as a previous poster suggested and it came out very rich and creamy. I doubled the recipe so I used 8 oz of velveeta and 12 oz of cheddar. Also, the cheese soup isn't great -- it's a short cut, but you'll get better results and flavor using velveeta -- yes, velveeta -- use the block rather than slices and cube it -- it melts great. Also, I use a can of evaporated milk rather than regular homogenized milk. The eggs should give it sort of a custard consistency that holds it together the sharp cheddar will give you nice flavor, and the velveeta will give you the creamy texture. I don't recommend stirring it a lot in the slow cooker. just my two cents. I WEIGHED the grated cheddar and used 10 full ounces. DO NOT use the pregrated stuff or you will have bad results. Hubby loved it and we will definitely have this again in the future. If you follow the recipe correctly it turns out great. My only change was to put it in a casserole and bake it in the oven on 325 degrees for around 25-30 minutes. Then I added 1/4-1/2 cup additional grated cheddar and put it under the broiler until that was melted. Paula you have hit a grand slam with this recipe. It reheats in the microwave easily too. Not the healthiest dish in the world, but you could use whole grain pasta, low fat cheese, milk, and sour cream if you want. I prefer to make the full mac daddy version as an occasional treat. That's the only thing I do different. It's WAY EASIER. I start with wisking my eggs right in the crock pot (no extra dishes to clean), I add in the soup, then sour cream, then everything else, except the cheese and butter, put them in LAST (unmelted), then you're ready to cook. This compares to another mac & cheese recipe my family has used for years, and the cheese was not pre-melted for that recipe either. This is a super great hit at ALL potlucks I have taken it to. It turned out terribly dry, so I stirred in more milk and heated it through and served it anyway. The kids ate it all, as did many of the adults. Next time, I'll keep the crockpot on low. Can't believe that so many gave this a negative review when it was absolutely delicious, even with my error. I would highly recommend this recipe to anyone. I know several people who ate it at Christmas asked me for the recipe.
