I used a can of beef broth and added water to make 2 cups and E & J Brandy reserve. I also cooked in cast iron skillet and 12 oz ribeyes 6 mins each side. Turned out excellent. My husband travels across the world and said it was one of the best steak dishes he's ever had. It was very tasty and could become addicting. Although I had to use beef stock instead of veal stock, it still turned out just fine. Also I do not add salt until the end because it seems that once you put the sauce on the steak it is salty enough. Homemade garlic mashed potatoes and green beans are my favorite side dishes :). I hit a home run with this one. I did substitute a couple of things though for the dish. I did cook the meat for 4&1/2 min on each side. Plus we dont use alcohol, so i substituted the brandy for apple juice (equal amount). Also i could not find veal stick, so i used beef stock. Perfecto!!! I also added fresh musrooms, and then thinly sliced the meat and put this on homemade croustini for a beautiful appetizer. There were no leftovers. |
