For those of you who like wings and beer or pizza and beer, this is a great recipe to try out with friends. Only things I'd suggest: 1, If you aren't a blue cheese lover, try feta! I also used one of her previous ideas where you drizzle EVOO on a baking sheet and bake 10 min. Then I cooked the chicken and started the sauce and combined them and added to the baked dough. Instead I sauteed the seasoned chicken breasts in the 2 T of butter over med heat. Used the sauce ingedients to deglaze the pan. Saves a pan and you get all that carmelized goodness in the sauce. I didn't have scallions on hand, so I subbed some chopped celery leaves for them. The chicken didn't really have a "buffalo" taste, I think the tomato sauce was overpowering, but it still tasted good nonetheless. Next time I will use a bit more hot sauce and less tomato sauce. We had some friends over one evening and I was a little unsure of how the meal would turn out, but it was very easy to follow and incredibly tasty. Plus, the ingredients are average ones that you would have in your kitchen anyways, which is a total bonus when you don't have to carry a large grocery list to the store for one simple meal. The only problems that I ran into was that the chicken was a little hard to cut after grilling and the scallions didn't slice into thin pieces as easily as they did on tv. Luckily dicing the the scallions tasted just as good. So if you are in the mood for some quick, easy, and spicy food, then this is your meal! The whole family liked it! I've made it a couple of times already. To save time, I bought a Boboli original pizza crust, 2 - 6 oz. bags of Tyson Grilled Chicken Breast Strips, feta cheese instead of blue cheese (they didn't have good looking blue cheese in the store) and just used a regular yellow onion instead of the green onions and this pizza was out-of-this-world delicious! I used 6 oz. of tomato sauce instead of 4 oz. because I like extra sauce on mine. Next time, I will use 6 oz. of tomato sauce, 3 T. butter and 3 T. hot sauce for the sauce mix. I also put buffalo sauce on the pizza dough before I poured on the chicken and tomato sauce mixture. I put about 2 tablespoons of fresh, chopped basil and put it over the pizza, along with 2 cloves of chopped garlic. Amazing and simple!!!! The only chicken I ever wash before using is a whole chicken. FYI, Rachael always uses separate cutting boards and utensils for raw poultry - and she washes her hands if she touches it.
