We felt the sweetness of the dressing complemented nicely with the saltiness of the bacon. I do want to make a comment about the mushrooms though. I couldn't recall how much she used on the show and thought a pound sounded like a lot, so I only used 1/2 pound, which I felt was plenty for this salad. Obviously, the bacon can be done ahead, but you can also cook the onions and mushrooms early and reserve them. Toss them into the vinegar mixture at the last minute to warm and serve!
