Made this recipe for the first time for a get-to-gether with friends and they were a hit. The only mistake I made was I should have rolled out the pie crest thinner as the dough overpowered the filling. Also I would be sure to chop up all items in the filling as thin as possible

I just made these and they are awesome! They do take a little time but very well worth the wait. I read other reviews and bought the crescent roll dough instead of the pie crusts - perfect. If making for a party, do these ahead and stick them in the fridge. Fry when guests arrive and make sauce at same time. Enjoy!

These were a hit at my office celebration of Cinco de Mayo. I baked them instead of frying. I also added in an extra jalapeno and a few small sweet peppers. The pie crust worked perfectly, just make sure you roll it out nice and thin. I got about 14 empanadas out of each pie crust using a 3 inch cookie cutter. Baked at 400 for about 12 minutes on middle rack. They were DELICIOUS!

It still gets a 5 even though I thought by using the pie crust was too sweet and it did fall apart easy. They were still oh soo good. The next day I made my own dough that was much better, however next time I will try the bisquit dough to see how that works out.

What a party treat - they were all gone. I used a shredded mexican cheese blend and it was great. The pie crusts worked fine for me - I used the Pilsbury roll pie crusts, just let them warm up a bit after you take them out of the fridge so that they are more pliable. Using both pie crusts I got a yield of 27 empanadas with plenty of filling left over (I may have used more chicken than necessary - I just cooked up 5 chicken breasts). I did find though that shredding the chicken or chopping it pretty fine works better so that larger pieces of chicken don't tear the crust when sealing. These also cook up well if you don't have a deep fryer - I improvised with a sautee pan with about an 1" of oil.

Haven't made this yet, but here's a helpful hint...Goya makes pre-made empanada discs, they are found in the frozen ethnic food section of most supermarkets. These eliminate the hassle of re-rolling the pie dough. They're about $1.39 for a pack of 10

Made these for the superbowl and they were absolutely awful. They fell apart in the deep fryer. Then baked the rest and they, too, fell apart. If biscuits were supposed to be used, then it should have said so in the recipe. Pie crust is definetly not the way to go.

I made this with biscuit dough, as some other reviewers suggested...maybe since I used Grands biscuits, it would account for the thickness of the dough! Next time I will try either pie crust or crescent dough for a thinner outcome. The filling was delicious, even omitting the jalapeno. Additionally, I baked mine instead of frying, 350 degrees for 30 minutes with an egg wash over the empanadas before baking.

I enjoyed this recipe, but in stead of pie crust I used pre-made empanada dough disc found in the Latin frozen food section. The disc come in two sizes, 4" and 5". Just defrost, flatten with rolling pin if you find the dough too thick,fill, close, and fry.

I made just a little bit easier and healthier version.. I used the diced chicken, 1 package mexican seasoned cheese, 1 package of softened low fat cream cheese, and 3/4 cup of medium salsa! Then instead of frying, I put an egg wash over them and baked them for 15 minutes at 425 degrees. They were great!

I didn't have any left. Everyone absolutely loved them. I baked them at 350 degrees for about 30 minutes. I brushed them with egg wash before baking. I'm just too lazy to deep fry sometimes!

The empanadas were to die for!! I made them for my best friends birthday and everyone loved them! I read another review saying that the pie crust falls apart and to try cresent roll dough. I tried that and it worked much better! The pie crust has to fry longer, but the cresent rolls are literally a flash fry and their done. They hold together better- and they aren't as flaky. But some people liked the pie crust and some people like the cresent rolls. All in all they are fantastic!

This was delicious! The pie dough did come apart a little when it was done cooking, but it still was great! And the sauce....yummy too. Definetly will do this again.




Easier Empanadas

My husband made the Empanadas with the pie crusts, while the flavor was great the crust was difficult to manage. However, the next day he tried it again with cresent rolls and biscuits and they were marvelous and much easier. I guess if you can cook like Paula D the crust is best but for the rest of us, try the biscuits and cresent rolls.

This was delicious. I did make a few alterations and left out some of the spice and bell pepper. I also used a larger cookie cutter (about a 5") it worked much better. I am going to try this using flour tortillas like burritos and frying them. Thank you Paula!

I was an audience member of Paula's Party, where this recipe was featured. I couldn't wait to get home and make it with my 6 year old daughter. It was so fun and easy. She truly enjoyed filling, folding and crimping the scrumptious Empanandas. I left out the Jalapeno, because I was making them for the kids, but they were still awesome. My oldest son stated that they were the best snack he had eaten. Thanks Paula
