This was such an amazing sandwich! I used brie, peaches, and just some mixed greens because it's what I had on hand. Amazing!

So good!

This sandwich sounds strange, but the flavors work so well together! It is a great snack!

used brie and added one thin slice of prosciutto to each snadwich. The BF liked it so much he left the house to buy more bread for a second sandwich 10 minutes after finishing the first one at 9 pm.

It was good however, I know these ratings are about the food, but I must wonder, how can a graduate from UCLA who has been living in America for 30+ plus years possibly get away with saying "littler"? What's worse is her attempt to speak Italian. Taleggio is not pronounced tell-ah-gio, and asiago is not pronounced ah-sah-gio. I don't know if she thinks that acting stupid will make her seem cute or she is just stupid.

I used apples, spinach and brie and they came out soooo good. I don't have a panini press so I just grilled them on the stove-top and pressed them down with my spatula to flatten them a bit. Great idea for a unique sandwich!

Simple and delicious!

I brought the ingredients to a "Panini Party" - - each guest brought inclusions to share. This receipe took top prize! I used red anjou pears and used the recommended taleggio cheese instead of brie. Use plenty of pepper; it really complements the other, sweet flavors. It was just, simply amazing. I'll definetly make this one again!

Use whatever fruits or cheese you have

I first made this exactly as Giada did and loved it. The next time I was out of taleggio (very hard to find, even in Boston) and substituted Fontina - better! Then I used pears instead of peaches - even better!! I think this is a great recipe to use whatever you have on hand. It can be a bit messy, smushing everything together on the bread, but still wonderful.

The recipe was simple for my daughter and I for a lite summer dinner. We also used peaches. We couldn't find anything but brie cheese, but it was excellent. I think we will try a variety of cheeses and fruit...we decided this would also be a great breakfast, too! Vegetarian plus!

This is great!

I used apples, brie, and spinach for this panini and it was so yummy! My husband kept asking for more. I will definitely try it with peaches and pears next time. Really easy, really tasty. Thanks, Giada!

This looked a bit unusual to me but nonetheless I tried it for lunch today. I used what I had on hand which was rosemary chiabatta, frozen peaches, jarlsberg cheese and spinach. I told my husband - this is a bit unusual, so if you dont like it - dont eat it(he will eat anything I put in front of him, whether he likes it or not, and never complain) - he ate 4 sandwich halfs - he loved it.
