The differences in this salad and the one I had as a kid (I'm in my 50's)was that my mother used home-grown leaf lettuce instead of spinach, white or cider vinegar instead of red-wine vinegar - with equal portions of sugar to vinegar, and no eggs, mustard or mushrooms. However, even without those ingredients, it was a wonderful salad - so it must be all about the bacon... I guess anything tastes good if bacon is part of the recipe! Well, being that turkey bacon is like 95% fat free, it didn't render off much fat. So I just added a little olive oil and crunched up the bacon real good, and it still tasted great. It has a "smooth tangy".. if that makes any sense at all. A different sensation for the tastebuds.. lovely, and easy! This is a classic, including the 2oz portion of spinach as a starter. Make this a meal and serve 8oz of spinach per diner. Keep the same amount of egg, but increase the bacon by a quarter. There's no need to increase quantity of dressing, if you like your greens lightly dressed in all their glory. I didn't have thick sliced bacon on hand, but thin sliced bacon will do quite well. Thanks Alton. good idea WRONG recipe 04/21/2007 at 02:33am User: Anonymous User Rating: The idea behind this recipe is good but it is completely wrong.. this is an interoperation of a Pennsylvania Dutch recipe that has been made for years in the spring time with wild Dandelion. Unfortunately this version has lost most of the flare of the original. Cider vinegar is used and not red wine, and there is no mustard.. For any of you that has had the original this recipe is a disappointment..
