This is the best meatloaf I have ever eaten. A little labor intensive, but worth every minute I spent. I took it to work and shared it with my co-workers and they loved it too.

I saw this recipe coming up back on Sunday and decided to try it being a meatloaf freak. I've got my own recipe down pat, but this was a nice twist! Very moist, but I used a third ground sirloin, a third ground veal, and a third ground chuck. I thought more fat was needed. Also, do people who rate these recipes actually read? Add onion? Huh???

Skip the chorizo. It was too greasy. Next time I'd use a lean Italian sausage, or just the ground beef. The tortilla chips added a really nice toasted corn flavor. It was kind of like a "taco loaf". The topping was really great on the meat loaf, but not so great as a side sauce.

I was watching Emeril make this just the other day and had to try it out for myself. It is awesome. The taste is superb. You have to try this out and get others to give it a go too.
