The cupcakes are fabulous, but the amount of frosting this recipe makes would be enough to frost AT LEAST 100 cupcakes... Now I have an enormous bowl of cream cheese frosting and I have no clue what to do with it! Maybe I'll make a layer cake or something...

Not much flavor. I didn't find them oily like some did. Texture was fine. A lot of trouble for cupcakes that were just ok. Box mix is better. Icing is good but not any better than other cream cheese icing recipes. These definately weren't "throwdown" worthy.

First, I thought I was crazy because the batch made more than twice as many cupcakes as it said, I came out with 35 not 16. And those were full, puffy on top, not underfilled. The cake was a bit bland, not enough cocoa and I increased it to 2 teaspoons and it still tasted like red vanilla cake. They were not too sweet, which is good but I agree with many people that they were greasy. My cupcake liners were drenched in it. I would not make this recipe again, in fact I hope the competitor on the show lost with this recipe. I luckily had enough time before my tailgating party to find another recipe online and it was MUCH better. It was from that one company who makes all the baking decorating supplies and rhymes with Milton.

I thought this recipe was very good, although very different from a traditional red velvet. I'm grateful for the reviewer who suggested the Baking Conversion Chart at AllRecipies- it worked like a charm. I used that chart for the flour and sugar measurements and the cupcakes came out great-- very moist, but not the least bit oily. I did increase the cocoa to 2 teaspoons and was happy with the flavor. This is a recipe I will add to my box!!

My grandson Justin helped me make the cupcakes and he rated them the best cupcake ever. He even invented a song. It is the combination of the cake and icing that really does the trick. The cocoa doesn't stand out but I'm sure it contributes to the overall success of these almost winning cupcakes. We will try Bobby's cupcakes next week.

I have not made this recipe as yet, am still in the process of converting the ounces into cups. But, thought it might be of interest to other "bakers" that there is a Baking Ingredient Conversion Chart at allrecipes.com. This chart really helped me out. Hope it's of help to some other reviewers. Flour is not the same as sugar or cake flour or bread flour. This chart really helps.

I think this was a great red velvet cupcake. It was tasty and moist, not greasy at all. I'm an experienced baker, and I loved this recipe. I think the people that didn't like it must have had a hard time doing the conversion...but once you get it right....they are perfect!

I have to admit I didn't make the red velvet cakes from this recipe (boxed is easier and, in my opinion, just as good usually). I did however make a batch of this frosting and absolutely LOVED it! It was amazing! I took the advice of another reviewer and did about half the recipe and it was perfect for frosting an entire box of cupcakes. I also added some red sprinkles over the top to make them pretty. And if you cut the bottom of a small plastic bag and fill with the frosting and squeeze from the top, you can use that as a piping tool... super easy! I will make this frosting over and over... It is my new favorite and even better than our local bakery!!

Ok here's the deal on these red velvet cupcakes. You MUST make sure you have the right measurements for these or you will end up like the other reviewers who complained "it was too greasy" or "it was too oily" that's because they don't know how to read a recipe. There are 16 oz. to a pund, and 8 oz. to a cup in case you didn't know. When taking a first glance at the measurememnts for the icing, I realized there was much too much! I remembered on Throwdown that she used just as much cake mix as she did icing for her cupccakes! I myself enjoy less icing to cupcake ratio, and it al depends on your preference, so I cut the icing measurments down by one-half. I had more than enough icing to pipe roses onto all of them, but found it a bit too wet. The cake mixture made about 24 muffin sized cupcakes, and about 20 mini cupcakes. When they tell yu it makes 16 cupcakes, she uses giant muffin tins so watch out! I didn't choose to use vinegar, and just used a little bit more water, the cupcakes turned out great. I think next time though I will use a bit more cocoa powder to give it more flavor as well.

this is my first time making this recipe and i dont think i followed it 100%, but the cupcakes were weird and i dont think they had enough cocoa. the icing was good, but i think i need more for the amount per cupcake i was using...i dont know... ill try it again

These cup cakes have a nice crumb, but the flavor is bland. The cream cheese icing complete takes over and steals the show. These cupcakes are really not impressive.

I read all the reviews and decided to try this after all- maybe w/ user tips they'll turn out good. They lacked one thing- flavor. The tops were hard and they were only in for 20 minutes. I upped the cocoa powder and still they tasted like nothing. They were moist yes from all the oil, hard on top and flavorless. The icing was AMAZING but cut it in half as you could frost 72 cupcakes if you did a whole batch. I also added a drop of almond oil to the icing- that is winner I'll use again and again.

So, the recipe says it makes 16. That means if you are making jumbo ones. I got 30 regular sized cupcakes out of it. And just a warning to you, the frosting makes enough for two regular sized cupcake batches. So you can frost over 60 cupcakes. I was putting huge piles on top too because I knew I wouldn't use that frosting for anything else. You could cut the oil down maybe a little. I thought they were really oily. But, man they were good and moist.

I was so looking forward to this recipe after viewing the TV show with Bobby. All I can say is that this couldn't POSSIBLY be the same recipe she uses. It was insanely greasy....we all tried one and will throw away the rest. I will be logging in an hour on the treadmill because of these disasters. They are tasteless too!

I was really disappointed in how these turned out. They were bland, although I had increased the cocoa and had a grainy texture. No one in my family liked these, including the kids, and we ended up throwing them away. I measured the dry ingredients exactly (using the provided conversions).

I have to say, I loved the tangy flavor of these cupcakes, but they turned out ridiculously greasy. Every wrapper had a pool of oil at the bottom of the cake, which was a bit embarrassing when I passed them around to all my friends and family during the holidays. I would also add more cocoa. The frosting amount is also way over the top. I should have quartered it, because that will still be more than enough to frost all these cupcakes generously.

I did not make this recipe. I was looking for a recipe for red velvet cupcakes. Came upon this one first but she has the flour and sugar in ounces not cups. That just makes it more difficult especially if you don't have a scale. I looked further and found a recipe that suits my needs.

I found these to be delicious! As many reviewers have noted, the frosting is divine (though the recipe makes an enormous amount, if you don't want leftovers, just half it). The cake has the best texture and while mine came out with a slightly "crisp" top, that was remedied within a few hours from being frosted. I do think the cake is mild flavored, but paired with the frosting, it's perfect.

The cupcakes tasted great, but the only thing I had a problem with was that it was too greasy. Other than that, the cupcakes had good flavor and were moist. When looking at the frosting recipe, over a pound of both cream cheese and butter seemed way too crazy for me so I used this recipe instead and it turned out GREAT! 1 (8-ounce) package cream cheese, softened 1/2 cup (1 stick) unsalted butter or margarine, softened 1 pound box confectioners sugar 1 teaspoon vanilla extract 1 cup chopped pecans (optional)

I made this recipe twice...the 1st time I made it exactly as directed, except I only had one bottle of red food coloring and it calls for 2 tsps more. (Still came out a rich red color, though.) I was shocked at how much frosting I had leftover! Although moist and delicious, neither myself nor my family could taste the cocoa in the cupcakes, so the 2nd batch I used 1/4 tsp vinegar LESS and 2 tsps cocoa powder instead of 1 and 1/4. Everyone LOVED them and the recipe has been printed off by the 100's. They are definitely the MOISTEST cupcakes you will ever eat. And, the most delicious.

I am so glad that I looked at all of the reviews before trying these cupcakes. After watching the Throwdown episode on cupcakes, I knew I had to try them. They turned out great. I gave them away as Christmas treats and the family ate the rest. I plan on making them again real soon. I really feel that the conversion measurements from a previous review was very helpful. It really allowed my first try to be a complete success. I know that everyone has stated that the frosting is super. I too will never go back to any other kind. Next attempt will be Bobby's.

These cupcakes were delicious! They are a little greasy-but when they are put together with the frosting they are divine. The cornbread comment made me laugh because when the cupcakes were baking my kids thought I was baking cornbread (they do smell a little like cornbread when they are baking). I followed the measurement conversions recommended by someone else and they worked great. I made 24 regular sized cupcakes and piped on a lot of the frosting. A perfect holiday treat!

These turned out very well. Extremly moist. Got rave reviews and multiple requests for the recipe. I cant help but wonder if some of the people who had trouble was with the measurements. 15 1/2 ounces is weight not volume. Believe me, I've done that!! Used my own cream cheese icing. For simplicity, used 1oz red dye. Thank you to the rater who reminded me this is a buttermilk cake, not a red chocolate cake,

I made these exactly how the recipe told me and they were terrible. They were way way way to oily. I had to try one just to see how they were...Never again. Makes me sick just thinking about them......But that Frosting was the best!!! I will NEVER used premade frosting Ever Again!!!

I think this recipe calls for way too much vegtable oil! I made it the second time and cut the oil by 1/2 cup and it was still too oily. Other than that the frosting is the best part!

I loved the fact that she uses oil instead of butter. It definetly makes the cupcakes much smoother. As with any recipe I mildy changed a few things, such as the amount of cocoa, and came out with the best cupcakes I've ever made. I couldn't even wait to let one cool.

These cupcakes are divine. And the frosting is the perfect compliment. The cupcakes are very moist and stay fresh tasting for days. The only tricky part was converting ounces (used for the flour and sugar) to cups. After a little trial and error (and some mad math skills!) I think I have this recipe perfected (the flour is 2 3/4 c. + 2 1/2 Tbsp. and the sugar is 2 1/2 c. - 1 Tbsp.) Thanks for this awesome recipe! I'm going to serve these over the holidays and I'm sure they're going to be a hit!

This was the worse recipe I have ever made. First they were flat and crispy on top. Second, the first bite I couldn't believe they tasted like cornbread. I didn't think the recipe sounded right and then when I tasted them I knew I was right. Don't try this one, it is a waste of time.

...but I don't. I followed the recipe exactly and the results were certainly moist cupcakes but I agree that they lacked flavor. I used a very high quality vanilla and cocoa and have a digital scale but the cupcake was just not very good. The batter tasted awesome because I was going to tweak the recipe as others had suggested. It was sweet and had a pretty decent flavor but once it baked it was bland and not very sweet and flavorful at all.

From top to bottom, these cupcakes are an absolute hit. When they're big, they make the best impact at parties. And they're always moist and tasty! I found the frosting recipe to be a little too soft at room temperature, so perhaps limit the amount of butter involved.

Wonderful recipe. I divided it in half (not easy, by the way), as 16 Texas size cupcakes seemed a bit much for the two of us. Anyway, this is a keeper. PS: The cocoa in this recipe is used as a leavening agent, not as flavoring. Maybe Terri should have specified to use "natural cocoa powder" (reagent with baking soda) ~~ not "Dutch process cocoa" (reacts with baking powder) or any other kind of cocoa. But she didn't, so here we are.

I am so glad I read the other reviews before making these cupcakes. It gave me a chance to research and tweak the recipe. The person who wrote about the different weights of the flour and sugar really helped me. It gave me the opportunity to get everything right before making. These were my changes...I used 3 cups of AP flour, I used 2 1/4 cups of sugar and I added an extra tablespoon of cocoa powder to the 2 1/2 teaspoons. For the frosting, I halved the recipe, using 1 1/2 bars of Philadelphia cream cheese, 2 sticks of butter, 1/2 tablespoon of vanilla and ONLY 1/2 pound of powdered sugar. Believe me...1/2 pound is sweet enough. They baked up moist and delicious and I slathered them with icing and still had plenty of icing left over. Try this recipe and you won't be disappointed.

I've already baked these several times. I only did half of the ingredients and it came out to 12 cupcakes and a little extra to fill a mini loaf pan. Now I'm gonna try and convert this recipe into a cake! I really hope it's gonna be as amazingnly delicious as the cupcakes are...

these cupcakes were awesome. they were very moist and the icing was amazing! the only thing i would change is the icing amount, only make about half of what it calls for because thats all you'll use and i added pecans in the icing but it was just as good without them.

I don't really understand why some people had a problem, making those. If you follow directions they come out moist and smell and taste great. The only complain I have is the amount of frosting. I have frosting left over to frost about 20 more. Just cut the frosting in half and you'll be fine. My family loves them.

After watching this episode I had to try making these visually appealing cupcake. After watching the judges reaction, I decided to up the chocolate. This recipe isn't hard, but requires a lot of ingredients and is rather time consuming due to the wonky amounts. The cupcakes are good, and incredibly moist but I felt that the flavor was lacking. It's a good ting I chose to up the cocoa. The recipe for icing makes a TON so watch out. Even piling the icing on as Terry did, I still had a lot left over. They were a lot of fun to make and decorate.

Now why couldn't Food Network just convert the flour and sugar to cups? Mine were just like the others, greasy and nasty. In the trash. Added a bunch of flour and cocoa and they were much better. Next time I guess I have to get a scale and weigh the flour! Seems easier for everyone if they would just make it consistent!

This cake was great. After reading everyones reviews I had to try this cake, to solve the problem of the cake being too oily. Made the cake to the original recipe, no problem with the oily issue, however I felt the cake was too heavy and not enough cocoa. I altered the recipe by substituting the AP for cake flour and increased the cocoa to 2T.. This produced a lighter cake with an increased cocoa flavor. All in all this recipe is fine and one thing I've learned is baking is a science. Exact measuring is a must. Give this cake a try, be precise and I'm sure you will love it as much as me.

I did not finish watching the show, but I knew I want that cupcakes! So today I made it and used my "regular" cream cheese frosting recipe and WOWWWWW!!! THANK YOU FOR SHARING THE RECIPE.. I am really glad I tried. I really like it! My two year old ate three (without the frosting). The recipe makes about 30s muffin size cupcakes and they are done in 20 minutes.

As a professional baker, I am always trying new recipes. I tried this one and I have to say, I can't figure out why it didn't work for some. I found it to be a very moist cake with a tender texture. I used good quality vanilla and cocoa powder. I weighed all of my dry ingredients and had no problems. The taste was very good and I will use this recipe again in the future. It was a big hit with my family, too.

I made this recipe using mini cupcake pans and just a small dollop of frosting. (I piped a small flower of frosting onto the center of each cupcake using a pastry bag.) I found that the cake is delicious by itself - I didn't think it needed the giant scoop of frosting like she added on the show. (I doubled the cake recipe, but used less than a single frosting recipe.) They were perfect bite sized cupcakes for my party. (Double recipe yielded ~150 mini cupcakes.)

I made these cupcakes, ignoring the fact that it calls for "15.5 OUNCES" of flour, rather than 2 cups. I just substituted 2 cups. Well, my cupcakes came out completely disgusting... extremely oily and dense. I checked the conversion and one measuring cup of flour weighs about 4-1/4 ounces. One measuring cup of sugar weighs 7 oz. So unless you weigh these ingredients, you have to convert these two to avoid my disaster. I'll try the again after another trip to the grocery store.

I made these after watching the show. No wonder Bobby won the throwdown. I doubled the chocolate, but these still lacked flavor. I should have known better when I read the recipe & saw that it called for nearly 1 pound of sugar! Even the frosting is lackluster. The one thing going for them is the moisture.

I doubled the cocoa, just because in the past, most red velvet recipes I have made, lack any cocoa flavor, and they turned out very good, very moist. I was kinda leary because it did not call for any butter, I thought that was kind of strange, but they turned out well. Very, very moist!!
