I went into this thinking the pork would be bland with just salt and pepper, and the vinaigrette would be too strong of balsamic flavor. I was wrong on both accounts! The pork was flavorful and juicy and the vinaigrette had a perfect blend of flavors. Am going to use the rest of the vinaigrette for a salad later in the week.

I am reluctant to make pork roast usually because it tends to be dry and bland, but this method was really very good. I even reheated it the next day for another recipe, and it was still moist. The vinaigrette was delicious as well - so much so that I put it on all my salads right now too. The roasted garlic burnt in the oven, but my oven is possessed by the devil, so it may have been a weird temp.

My husband and I were hosting both sets of parents for dinner, and we decided to give it a try. The only change we made to the meat preparation was to rub the top with a little extra virgin olive oil and some fresh chopped herbs. The meal was delicious! The meat was so tender and flavorful, and the sauce was so easy to put together. Everyone raved about the meal and asked for the recipe. Some of my garlic cloves did get a little blackened, but we will just reduce the cooking time for the garlic next time. We will definitely make this again!

I followed the recipe exactly for the pork and it was fabulous! I did cut back slightly on the amount of balsamic vinegar in the sauce and that was also fabulous! The family loved it. This is definitely a meal that can be served to company. We had a Shiraz wine with our dinner that totally complimented it.

The only thing I changed is adding some rosemary to the roast. The roast was juicy and tender and the Vinagrette really brought out the flavors. Everyone, even my picky family, loved it.

I prefer rosemary on my pork loin but the vinagrette was terrific on a salad which is why I gave it 3 stars. More garlic next time.

I only wanted to try the vinaigrette part of the recipe for a salad I was making. First of all, after roasting the 2 split heads of garlic, like the recipe says, I was very upset to find that 2 of the 4 halves of the garlic were completely burned to a crisp. While the garlic was in the oven, I smelled burning, but I thought it was just some of the olive oil that had happened to drip onto the stove bottom. Either the temperature was too high or the given amount of roasting time was excessive. Since half of my recipe was completely ruined, I had to make do of the partially burned garlic head halves that remained. And plus, the balsamic vinegar was way too potent. This recipe was entirely unsuccessful--and made my house smell like burnt garlic for days. Infuriating!!

My husband and I both really like garlic so I was looking forward to this sauce. I thought that the vinegar flavor was too strong and we couldn't taste the garlic. It was like putting a salad dressing on the pork. Next time I will use half the vinegar and then add to taste.

I've made it three times now. The first time I invited my mother over for dinner and we all loved it. I honestly did not expect to like the vinaigrette as I'm not a big fan of garlic or balsamic vinaigrette but I made to have something to dip the pork in. It does make a lot of roast but I eat it for days - lunch and dinner - and never tire of it. I made it again last night and made a DOUBLE batch of the vinaigrette. I do use the very high quality balsamic vinaigrette for it. I like the sharp/sweet taste of the sauce and I don't find the garlic to be overpowering. My 5 yr. old daughter would drink it out of a cup if I allowed her to. This will definitely be a regular in my house.

i made this for my boyfriend and he loved the vinaigrette. we are big garlic fans in my house....my first pork loin and it was a hit. i do agree with others depending on your pork loin be sure to season very well with lots of salt and pepper

We did not make the pork b/c we were just making a salad, but we did make the dressing and it turned out great! We added a couple of sun dried tomatoes too. Will make again & try with the pork loin recipe.

This recipe is an excellent choice for an amazing pork roast. I followed the instructions and added a teaspoon of dijon mustard. It was so perfect! Juicy, tender and tasty, my family's response was "WOW." Considering my 4 and 7 year old's tastes, this one is definitely a keeper, Thank you!!

I personally thought this was a pretty good recipe. First of all the smell of the roasting garlic got everyone in the house hungry. The vinaigrette itself was very strong so I added a little more olive oil. The roast itself seemed a bit bland the way explained to I made a rub of Italian herbs and that really picked up the flavor. When the vinaigrette was done it was a little thin so I added a bit of cornstarch to make more of a gravy. The next day I used the vinaigrette to mix with some mayo and made some roasted pork loin sandwiches with roasted garlic aioli (sort of aioli). It was delicious.

This was soo good, everyone loved it! to give the pork more flavor I cooked it with sliced onions and mccormick grill mates seasoning (steak). It had a lot of flavor and the sauce definately enhanced it. 60 minutes for roasted garlic was worth it!

The roast took way longer than the recipe "suggests" to get to temp and it was flavorless!! It needed something and it wasn't that vinaigrette. All you could taste was the vinegar. Definately needed more garlic and less vinegar. No impressed at all. Better luck next time.

My mother-in-law from Sicily is a VERY picky eater. I decided to try this recipe out for her and my father-in-law for a Sunday dinner....she is a pork fan now! She could not believe how juicy and tender the meat came out. The roasted garlic sauce has made its way into other dinners. highly recommended!

This recipe was easy and delicious! The sauce was a wonderful match to the pork and could be easy used with a tenderloin if desired. We will be making this again soon! The only thing I would recommend is adding some fresh thyme to the pork when you roast it.

Found the roast took much longer to cook than specified. Also it was almost tasteless, even with the Vinaigrette. Just need to know how to use the great amount of leftover roast that I have.

Wonderful dish, everyone loved the vinaigrette. I do suggest using good quality balsamic vinegar, though I would not recommend using top-quality Traditional Aged Balsamic Vinegar from Modena as this is TOO concentrated and expensive. I did use more garlic then what the reicpe called for and I also used a small amount of olive oil in the roasting pan with the pork. I also suggest seasoning the pork with a GOOD amount of salt and pepper.

I love Giada's recipes. But I have to agree with some other reviews. The balsamic is way overpowering and you don't really taste the roasted garlic flavor that I love. I made some alterations to the receipe. First, I reduced the balsamic by half and roasted an extra head of garlic and it turned out very well. This vinaigrette is so versitile is would be great on chicken, pork chops and even salad. I will be definatly be keeping the vinaigrette recipe.

I tried making the garlic vinagrette I thought there was WAY too much garlic The next time I made it, I used one bulb of garlic and it was much better.

i do not eat meat but loved the vinaigrette. everyone else loved the pork loin also. was very easy to make. i had to do the garlic for a shorter time but once i figured that out there were no problems.

I was excited to try this recipe because I love roasted garlic and balsamic vinegar, but the vinegar overpowers the roasted garlic flavor! I thought it was too sweet for the pork. Maybe better for salads.

After reading the other reviews I was sure to season my pork generously and it turned out yummy. However, the vinaigrette was way too tart and you couldn't taste the delicate flavor of the roasted garlic at all. I surely wouldn't call it 'roasted garlic vinaigrette' more like balsamic gravy! Might try it one more time with a small portion of the vinegar next time.

What a crowd pleaser, I read some of the reviews below and I think you just have to make sure you season your meat REALLY well, and then use a good quality balsamic vinegar! That's just what I did, and it was outstanding and even more amazing the next day!!

I felt that the Roasted Garlic Vinegarette had to much Vinegar in it. It was pretty good when you first made it but if you eat it again I think it was too much and you cannot heat up the vinegar.

Giada has some great recipes, this one not it. Pork was bland, but sauce was very fresh. Unless you love pork, stay away from this one.

it was really easy to make, a little messy, but i roasted some potatoes and carrots with the pork roast. i would suggest using a little less vinegar or make sure your vinegar is very smooth because the sauce has a bite to it. otherwise it was delicious.

I have made a lot of Giada's recipes and 99% of the time they are really good but this one I would not make again. The garlic vinaigrette had a lot of garlic in it but it seemed like the vinegar just overwhelmed it. All I could taste was the vinegar. By the way, I followed the recipe exactly except I used pork tenderloin instead of just pork loin.
