I did make a few adjustments based on the reviewer comments. I substitued 1 cup Splenda for the 2 cups granulated sugar; used 1 cup brown sugar light (Splenda)and did not pack the sugar for the 1 cup brown sugar, and I used light butter (less fat). Also I did not measure my cubed bread - just filled up a 9 x 13 pan so am sure I had more than 3 cups. My next try with this will be with a Strawberry Sauce instead of a Carmel Brandy sauce. Anywhere it called for sugar, brown or granulated I used half. I was perfect!! Just the right amount of sweetness. I also added cinnamon. The topping is crunchy and adds a nice texture. This is the best! Easy to make. I added some apples, raisins, cranberries, and cinnamon to the sugar topper along with pecans. The brandy sauce is great. This isn't too sweet. I think that the recipes are typed by an outside contract company so there is no use complaining about the recipes. The only solution is to print out the recipe before the program where it appears and then write it out as the host prepares the recipes. My husband is crazy for bread pudding and after seeing a show where she made this, I thought it would be a great treat for him. I am SO glad I checked out the reviews BEFORE I made this. Even though the recipe rated high, there were lots of poor reviews. Most of them spoke to the massive amounts of sugar the recipe required. I cut the granulated sugar to 1C for the pudding and added 1t ground cinnamon. I reduced the brown sugar for the topping to 2/3C and reduced the sugar for the sauce to 2/3C as well. It was delicious. I probably could have used a little less sugar and it still turn out beautifully. I can't imagine how sweet it must be by following the recipe exactly. Nevertheless, I followed the recipe almost to the letter, but eliminated about 1/4 cup of sugar in the egg mixture and eliminated 1/4 cup of sugar in the praline mixture which went on top. I added about a tablespooon of cinnamon. I loved the texture of the pudding itself, soft and custardy. HATED the overdose of sugar- it ruined the whole dish. Not enough cinnamon, next time I will add more along with some nutmeg. I need a different sauce, or I will use that sauce and eliminate almost all the sugar in the pudding. I like the texture of the praline crumble on top, so I would keep that. I thought that Paula being from t he South meant she would have the definitive bread pudding recipe. Not so. The best bread pudding I have ever had was at Ralph and Kakoo's, a restaurant in the French Quarter in New Orleans. The brown sugar mixture topping is overpowering. Does not refrigerate well. By the next morning the pudding had lost it?s substance, sank in the middle of the pan by half it?s height. It had deteriorated in to an egg like paste. Very unappetizing. Not terribly healthy. The four cups of sugar, one stick of butter and five eggs can?t be too terribly healthy for you. The first time I followed the directions precisely, but found it way too sweet and I didn't care for the brandy sauce. The second time I substituted cubed cinnamon raisin bread and cut the white sugar to 1 cup instead of 2. I also skipped the sauce and found I liked it so much better. It is still a wonderful recipe which my family really likes.
