I have made these twice now and I think the mini size of them is perfect. Bigger cupcakes are too rich. The first time I used pureed raspberries and it was amazing!!!!!

My daughter had this recipe TIVO'd for a month before we finally tried it! I was impressed that my daughter knew from Giada's teaching exactly how and when to add what. The taste, perfectly delicious. The size, convenient to share with others. This was a great first experience baking with my 9 year old aspiring chef. :)

I made these cupcakes over the weekend and my family and I LOVED them. My sister told me they blow away Sprinkles Cupcakes. My son wants me to make these cupcakes every weekend. Instead of using the mini pan size I used the regular cupcake size pan. These cupcakes were the best I have ever tasted. My only problem was I could not find mascarpone cheese,after 3 different markets I finally found it at Fresh/Easy market.

These are hands down the best cupcakes I have ever made. It doesn't get more moist than these. The first time I made them I did the strawberry glaze but found them to be really really sticky. The second time I made the batter as directed and frosted them with chocolate frosting and placed the fresh cut strawberries on top. No matter how you make them they are delicious!

These were a big hit for Mothers Day! I was kinda nervous reading some other reviews but i am so happy. I made these regular sized cupcakes, they turned out very nice, not rich at all. It's a very nice batter. I used 2 cups of Organic powdered sugar instead of 2 1/2 cups and used thawed organic whole strawberries, The icing was very nice, i took my time spreading the icing on, keeping it just on top of the cupcakes, i made sure the icing was dry enough before eating! THEY WERE WONDERFUL!

Easy,but the mascarpone didn't make up for the fact that the cake is made with vegetable oil and still has the gummy texture that you get from mixes that one can't really fail with but don't have the texture or flavor of made from scratch. I tasted the batter before baking and added some good vanilla, but it wasn't enought. Didn't bother to make the glaze after tasting the cakes coming from the oven. Cute, but that's about it!

I made these perfectly pink cupcakes for a bachelorette party and 8 skinny girls ate 48 cupcakes in about 2 minutes! These are amazing! I did not add any cheese to the icing as some suggested, but they still came out really really well. I am making these again later this week for another party and I know they are going to get great reviews again! Highly recommended recipe, especially for parties!

These are the best cup cakes I have ever made or tasted! Make sure to really whip the cake mix with the cheese mixture it does take about 3 min. but well worth it in the end! Enjoy

I made these cupcakes last night and they were so easy to put together. The cupcake itself is pretty light and fluffy, and then the strawberry glaze tastes so fresh. I used less powdered sugar than the recipe called for, and stirred in the strawberry puree slowly so that I could stop at the consistency I wanted. Overall, I really like this recipe!

I love these cupcakes.. I love the white cake mix with the mascarpone cheese. It makes it light and fluffy and delicious.. the glaze however.. is good but the first time I tried to make this recipe I had a mess with the glaze and it is STICKY!!!! So, I make these cupcakes with regular frosting in a can (i know, boo!) but it is so good. If I could get the glaze to look as pretty and to stay put the way Giada did on the show.. I would love the strawberry glaze.. but after it dripping all throughout my fridge... I'm sticking to my store bought frosting.

I made this for a post-holiday party, and it was a huge hit with everyone, adults and kids alike. Everyone asked for the recipe. I added 1/2 cup mascarpone cheese to the icing, and it turned out beautifully.

I am a novice baker- and these cupcakes made me look like a pro! I did not experience any of the problems others listed below. They were moist and flavorful. I added 1/2 C Marscapone to the icing as others suggesting and the icing was perfect consistency. Sweet indeed, but mini muffin size made them just right. I think larger size would be too rich. A++++

These are really easy to make. I used fresh strawberries, but make sure you don't use too much strawberry juice because then you'll need a LOT of powdered sugar to make the icing harden. Another great idea for these is to use some store bought icing to decorate these. It was my friend Kristine's birthday and I used blue store bought icing on the pink strawberry home-made icing to make little blue Ks. Really cute! And delicious!

These cup cakes are so light and not heavy like your average cup cake. My kids love them and I this will be on my list for parties and Holidays too. I saw this on tv and had to try it. Not too sweet at all. Better than a regular cup cake.

I made this recipe with organic vanilla cake mix - and it came out great. Really sweet and delicious, especially with the tart flavor of the strawberries. Be sure to spray the muffin pan - even if you use the new silicone bakeware.

Very tasty and perfect for summer. I don't know that the mascarpone affected the taste much, but it seemed to make a difference in the texture of the cupcakes, which were very smooth and not too crumbly. I only needed about half of the glaze that the recipe makes. I would cut the powdered sugar and increase the strawberries. The frozen berries actually add a little needed tartness. Before you blend, definitely drain the berries well though, otherwise it is runny, as others have said. I serve these with champagne, and they make a sophisticated dessert for the non-baker! :)

holy crap these are sweet. I used Giada's recommended Duncan Heins (spelling?) white cake mix and, combined with the really runny and messy frosting, made for an extremely sweet cupcake. I had even added cream cheese to the frosting, as one person suggested, but it was still too runny. I'd recommend using either another cake recipe or another frosting recipe. I used a simple lime icing for half of the cupcakes and it was much better because the tartness of the icing balanced the sweetness of the cake a little better.

These little guys just melt in your mouth! After reading come of the comments about the glaze being too runny I decided that when I was going to try making them I would add 1/2 C of mascarpone cheese to the glaze. It thickened it just a bit and took out a little bit of the sweetness that had also gotten bad reviews. *great for showers (make half with strawberry glaze for a baby girl and half with blueberry for a baby boy!!!)

This is the best and easiest cupcake recipes. The cupcakes came out super moist. I used one mini cupcake dish and one regular sized dish and they both came out great. I recommend using a cream cheese frosting instead of the strawberry glaze because the glaze is a little runny.

This recipe was good and made for a great bite-sized snack. I wish the mascorpone flavor come through a little bit more (as the batter was delicious). Also, I would add more strawberry puree, my glaze was still quite thick and overly sweet. But the real strawberry flavor comes through nicely.

The texture of the cupcake was simply delicious! And it was so easy to make, just add the mascarpone cheese to a box of white cake mix and bake. The icing was a little melty though. It stiffened up a bit after being applied to the cupcake but it was very thin.

i made these as full size cupcakes for a party, and they were such a hit, i wish i made a double batch! the mascarpone made the cake dense and creamy, and very cheesecake like. the intense strawberry flavor of the glaze against the creaminess of the cake is a perfect match! i will make these again and again!

These little gems make a whole new meaning to the word "Cupcakes". I have made these so many times and each time they are a hit! FYI I have also made them regular size as well as with chocolate cake mix. What makes them stand alone is the mascarpone cheese. Who knew that you could put cheese in cupcakes? They even taste good plain. Oh, and I have also iced them with chocolate frosting. Pretty tastey too.

These cupcakes were very tasty, but not as exciting as I had anticipated. The marscapone didn't add to the texture or taste of the cupcake, but they were still light and with the glaze, very fresh tasting.

I am usually adept at following basic instructions, but I don't know if I missed a step? I usually enjoy Giada's recipes, but the cupcakes turned out very crumbly and dry although the flavor was okay. I also should have added more powdered sugar to the glaze, although it too had good flavor. All in all, I think the next time I buy mascarpone cheese it will be for her tiramisu recipe and I will just go back to making cupcakes with the regular old box mix.

I made these for our 4th of July BBQ and they were a hit! The cupcakes were so moist and tasty and the icing was great. The icing recipe does make a lot, next time I will just make more cupcakes so I can use all of the icing! I added the strawberries to the powdered sugar a little at a time to prevent the icing from ending up too runny. I will definitely make these again. Thanks Giada!

I made these for the second time for fathers day. Next time I know to double the receipe because they were gone in seconds. The mascarpone cheese gives the cupcake extra moisture and a little kick to it. The first time I made these, I did regular sized cupcakes for our new neighbors. The icing was a little runny, but I didn't completely defrost the strawberries. The second time, I had left the strawberries out overnight and the icing was too thick. I just added a little extra strawberry juice and the icing was perfect. These are a huge hit.

I may never make another cupcake recipe ever again? A lot of people have tried these and everyone loves them. I didn't have mini muffin tins so i just put them on a baking sheet. The ones that I overfilled did kind of lean and they didn't ever look really pretty. I used 3 cups powdered sugar for the glaze and it seemed to be a good consistency, I think I may have used too many strawberries. I made these twice in one weekend, and may be making them again this week!

These were great cupcakes and were a big hit. Next time i do it though i will make regular cupcakes with the batter. I had two mini muffin tins and we made 5 mini muffin trays (60 cupcakes) when we could have made 1 regular muffin tin.

i've made these twice, once for my family to test them and then just this afternoon for a school party tomorrow. I'm thirteen and these are so simple and yummy. The first time i made them i had lots of extra batter, but the second time i made them bigger and it made about the right amount (instead of 72 like the first time!) Just be sure to wait to remove them from the muffin tin, because if you dont the tops will come off the muffins! one more thing... for the glaze i needed a lot more than 1/3 cup of strawberries for that much powdered sugar, but definitely a great recipe i will use many times. My family devoured them and im sure my friends at school will too tomorrow.

These were a hit with my family. I had just a small problem with the strawberry glaze. I ended up dipping the cupcakes into the glaze. I could not get the glaze thick enough like in the photo. Thick or thin glaze - either way they were very good.

The cupcakes were very tasty and light, but I'm not really sure the mascarpone was worth it. I think they tasted about the same as the cupcakes would have tasted if I had just follwed the box instructions.
