THIS HAS GOT TO BE THE BEST SANDWICH EVER! TYLER REALLY HIT IT ON THE HEAD IN THE SWEET/SAVORY DIRECTION. I ALSO HAVE TO ADMIT I MADE CHICKEN SOUP WITH THE DARK MEAT, & THE CHICKEN SALAD WITH THE WHITE. THEN WE HAD THE SOUP WITH THE SANDWICH. I AGREE WITH THE FOOD NETWORK COMMENTS, & AM REALLY AGGRAVATED WITH THEIR OUTPOURING OF OVERRUN REPEATS!!! BUT WE CANNOT COMPLAIN, UNLESS WE TURN THE CHANNEL, OR CALL THEIR 800 NUMBER. PLEASE JOIN ME!

It's a little labor/ingredient-intensive, especially if you're not used to making your own chicken stock, but the result is well worth it for a special dinner. Although I followed all of the directions for poaching the chicken, my guess is that this would be almost as good if you just used any plain, cooked, shredded chicken. We also added a couple tablespoons of honey to the chicken salad mixture to add a little bit of sweetness, although afterwards we weren't sure it was necessary, in light of the cranberry sauce and apples.

I tried it for my family and it was well received. Now my wife wants me to make it all the time. the brie was quite pungent prior to going under the broiler.

I loved this recipe. I suggest making the chicken rather then buying if you have the time. Easy to do just takes a while. I learned from one of the cooking shows 1/2 way through cooking turn chicken over on to the breast. All the flavor and juices go the breast and makes it tasty! I can't figure out why else someone would say chicken was bland. That is the only difference I can think of as mine was delicious. I told my girlfriend about it and she made it and took into work. Everyone loved it.

This chicken salad sandwich is the best I have ever had!! The only difference we made to the recipe is the addition of red seedles grapes, cut in halves. Awesome!! Definitely worth the effort!

I made this for my Mother-In-"Love" and her friends for a luncheon. EVERYONE loved it ! This is the best chicken salad and a very unique way of serving it with the brie, cranberries & apple. Thank you, Tyler.

Do yourself and your family a favor -try this! I made this for my family after watching Tyler's "Ultimate Chicken Salad" segment last week, and all of us loved it so much I made it again tonight! For convenience you might try a rotisserie chicken, however the side benefit of perfectly flavored homemade chicken stock is worth poaching the chicken as suggested. we found the poached chicken to be moist and flavorful, (come on people - 3 leaves bay leaves and an entire head of garlic?!) but if it doesn't work for you, add a bit more seasoning. I personally used toasted ciabatta instead of sourdough, and a granny smith apple. Open faced or not, kudos to Tyler!

The show, i will give it a 5 star, the printed recipe 0. Everytime i'm interested in making a dish from the Foodnetwork, i make sure that i "Always" tape the show (minus the commericals). I have so far 5 VHS tapes for each show (Tyler,Emeril,Barefoot,Alton,Giada)and 2 misc. tapes for other shows, because i know from past experience that the show itself can be different than the printer recipe. I always like to try something different from the Foodnetwork (i'm retired so i have the time), but, i will not make a recipe if i did not tape the show.

May some recipes on the website be slightly different than those on the tv show, I say keep your opinions of the technicalities about the recipe differences to yourself. Every recipe that you will find today has subtle differences that cater to all tastebuds. Its up to us to think outside the box, be creative and enjoy it for what it is and what it could be- for ourselves, not based on the writings of the recipe. Give Tyler and the Foodnetwork a break!

Tyler's recipe is very good! The chicken salad is excellent and east to make. I added another slice of brie and put the whole thing under the broiler before serving open faced. I made this for Father's Day and it was a hit!

I read the reviews before making and took some suggestions: I used grilled chicken breast not the poached chicken so the chicken flavor was not bland. I did use the brie but due to expense might substitute a different cheese next time. Also I might use the suggestion to try dried cranberries instead of the whole berry sauce I used this time. Overall, a very good chicken salad and very filling. It was a crowd pleaser when I took it to work. I will make this again soon.

This is deffinently the best chicken salad ever. Asan alternative to the cranberry sauce you can add dried cranberries works just as well and is yummeeee!!!!

I always look at a written recipe as a "guideline" that you should follow in order to prepare a specific dish. As it has already been mentioned, individual interpretation often comes into play making the way a recipe is prepared on TV vastly different from what is written on the website. When I made this recipe, I just stuck with the chicken salad alone without the cranberry brie toast. I made adjustments to suit my particular tastes and I really enjoyed the flavor and texture of the dish. Did I follow the recipe on the website? No. Did I prepare it exactly the way Tyler did on TV? No, because I used leftover roasted chicken instead of poached. However, I did follow all the other elements of the chicken salad recipe (except for the cranberry brie toast part) and was very pleased with the end result.

I strongly agree with the two people who noticed a difference with the recipe after seeing it prepared on TV. It has been a very continuos problem with Tyler's show more than others and I have complained about it before. It is good to know that I am not alone!

I can't really rate this recipe because I haven't tried it, but I had to write in and agree with Anonymous that there are multiple times I have found differences in the typed recipe from the version on TV. Food Network should be a little more careful in the accuracy of their recipes from the TV presentations to the typed versions on the website.

I think poached chicken is totally tasteless. All the chicken flavor goes into the broth. Roast one yourself or buy a rotiserie one for more flavor.

i just got done watching him make 6 opened faced sandwiches, not regular ones like the recipe says. the order he put them together is also different. it still looks like a great recipe, and Tyler is my favorite chef. so i will try them anyways.

If I could give this higher than a 5, I would. This was the best sandwich I have ever had. A friend came over with her children for a play date, and I made us this for lunch. She wasn't sure at first when I told her everything that was in it, but after she ate it she said I should open up a cafe. It was excellent, as usual from Tyler!

Tyler has outdone himself again! This was the best chicken salad I have ever tasted. I followed the recipe (only I had to use boneless skinless chicken breasts) but I poached them like the recipe said and it came out tasty. My husband doesn't like fru-fru food but he devoured this and wanted more. I will make it again and again.

This recipe was really good. The only things I would do differently is use a little less mayo and I probably wouldn't toast the bread beforehand. Since the inside is so soft, it kind of squished out and was hard to eat with the toasted bread. I will definitely make this again though.

I love a bistro-style, high-quality chicken salad and found this recipe to be wonderful! I didn't do a whole chicken, instead opting for 2.5-3# of bone-in, skin-on breasts for poaching. Hand-shredding the chicken was key to its tenderness and also helps you ensure that only the A++ chicken makes its way into the salad. Also, the touch of lemon gave it a very fresh taste. You don't even need the cranberry or brie... simply putting the chicken salad in an authentic, flaky croissant or nice brioche is enough for you to beg for seconds and thirds!
