TYLER REALLY HIT IT ON THE HEAD IN THE SWEET/SAVORY DIRECTION. I ALSO HAVE TO ADMIT I MADE CHICKEN SOUP WITH THE DARK MEAT, & THE CHICKEN SALAD WITH THE WHITE. THEN WE HAD THE SOUP WITH THE SANDWICH. I AGREE WITH THE FOOD NETWORK COMMENTS, & AM REALLY AGGRAVATED WITH THEIR OUTPOURING OF OVERRUN REPEATS!!! BUT WE CANNOT COMPLAIN, UNLESS WE TURN THE CHANNEL, OR CALL THEIR 800 NUMBER. Although I followed all of the directions for poaching the chicken, my guess is that this would be almost as good if you just used any plain, cooked, shredded chicken. We also added a couple tablespoons of honey to the chicken salad mixture to add a little bit of sweetness, although afterwards we weren't sure it was necessary, in light of the cranberry sauce and apples. I learned from one of the cooking shows 1/2 way through cooking turn chicken over on to the breast. All the flavor and juices go the breast and makes it tasty! I can't figure out why else someone would say chicken was bland. That is the only difference I can think of as mine was delicious. I told my girlfriend about it and she made it and took into work. I made this for my family after watching Tyler's "Ultimate Chicken Salad" segment last week, and all of us loved it so much I made it again tonight! For convenience you might try a rotisserie chicken, however the side benefit of perfectly flavored homemade chicken stock is worth poaching the chicken as suggested. we found the poached chicken to be moist and flavorful, (come on people - 3 leaves bay leaves and an entire head of garlic?!) but if it doesn't work for you, add a bit more seasoning. I personally used toasted ciabatta instead of sourdough, and a granny smith apple. Open faced or not, kudos to Tyler! Everytime i'm interested in making a dish from the Foodnetwork, i make sure that i "Always" tape the show (minus the commericals). I have so far 5 VHS tapes for each show (Tyler,Emeril,Barefoot,Alton,Giada)and 2 misc. tapes for other shows, because i know from past experience that the show itself can be different than the printer recipe. Every recipe that you will find today has subtle differences that cater to all tastebuds. Its up to us to think outside the box, be creative and enjoy it for what it is and what it could be- for ourselves, not based on the writings of the recipe. Give Tyler and the Foodnetwork a break! I added another slice of brie and put the whole thing under the broiler before serving open faced. I did use the brie but due to expense might substitute a different cheese next time. Also I might use the suggestion to try dried cranberries instead of the whole berry sauce I used this time. Overall, a very good chicken salad and very filling. It was a crowd pleaser when I took it to work. I will make this again soon. As it has already been mentioned, individual interpretation often comes into play making the way a recipe is prepared on TV vastly different from what is written on the website. When I made this recipe, I just stuck with the chicken salad alone without the cranberry brie toast. I made adjustments to suit my particular tastes and I really enjoyed the flavor and texture of the dish. Did I follow the recipe on the website? No. Did I prepare it exactly the way Tyler did on TV? No, because I used leftover roasted chicken instead of poached. However, I did follow all the other elements of the chicken salad recipe (except for the cranberry brie toast part) and was very pleased with the end result. It has been a very continuos problem with Tyler's show more than others and I have complained about it before. The only things I would do differently is use a little less mayo and I probably wouldn't toast the bread beforehand. Since the inside is so soft, it kind of squished out and was hard to eat with the toasted bread. I will definitely make this again though. I didn't do a whole chicken, instead opting for 2.5-3# of bone-in, skin-on breasts for poaching. Hand-shredding the chicken was key to its tenderness and also helps you ensure that only the A++ chicken makes its way into the salad. Also, the touch of lemon gave it a very fresh taste. You don't even need the cranberry or brie... simply putting the chicken salad in an authentic, flaky croissant or nice brioche is enough for you to beg for seconds and thirds! |
