These are not too sweet and are absolutely delicious. I used all Meyer Lemon Olive Oil for the olive oil, which was sort of pricy but the results were excellent. I also used half light brown and half white sugar since I like the rich flavor of brown sugar. Per previous reviewers do check these at 20 minutes. Mine were done by then. I am glad that I did. I would recommend watching the baking time closely, however, as I pulled them out at the minimum, 20 minutes, and think that they would have been better with a minute or two less cooking time. This muffin was interesting, not like the usual muffins we all make. The nuts are important to add crunch, and the zests add to the flavor. Normally olive oil and baking don't mix in my opinion.. years ago I tried olive oil instead of vegetable oil (when I ran out of it) in a cake and to describe the taste in one word.. NASTY! I love olive oil but I have to stick with my first impression- olive oil and baking don't jive. The olive oil flavor was just too overwhelming. The citrus and balsamic flavors were apparent, but I felt that I had just poured olive oil directly into my mouth. Some may love this recipe, but it was not a favorite for me. I would however try this one with vegetable oil and I am sure it would make the short list! A very nice change from the regular muffin. I was a bit nervous because they really smelled like Balsalmic Vinegar while they were baking but they don't taste in the least big like the vinegar. I added a little extra sugar to the batter because I like a lot of sweetness, but other than that, I did not alter the recipe. The lemon and orange zest give this a light, fresh flavor and blend perfectly with the olive oil and balsamic vinegar. There is no vinegary taste to these muffins. The tartness of the vinegar seems to cook out. The almonds add a nice crunch and I would not omit them as they significantly add to the overall flavor. This recipe made more than 12 muffins -- it was closer to 18 for me.
