I rarely bake dessert type recipes as I do not like sweet things. These are not too sweet and are absolutely delicious. I used all Meyer Lemon Olive Oil for the olive oil, which was sort of pricy but the results were excellent. I also used half light brown and half white sugar since I like the rich flavor of brown sugar. Per previous reviewers do check these at 20 minutes. Mine were done by then.

This was a fun recipe, and tasted wonderful too. The almonds gave it a slight crunch, and the zest was wonderful. Beware of using a LOT of oil in this one.

The inclusion of balsamic vinegar in these muffins was so different from any muffin I had ever made, so I had to try them. I am glad that I did. I would recommend watching the baking time closely, however, as I pulled them out at the minimum, 20 minutes, and think that they would have been better with a minute or two less cooking time. But they were yummy anyway!

I used Blood Orange infused Olive Oil and the muffins came out wonderful. A great citrus taste. I will definitely make these for my next brunch.

The idea of an olive oil muffin did not appeal to me, but I took a leap of faith because I love almost anything by Giada. This muffin was interesting, not like the usual muffins we all make. The nuts are important to add crunch, and the zests add to the flavor. These might be great to serve at a brunch, for something different.

My 4 year old daughter saw Giada making these muffins yesterday and wanted to try them, strangely I took the plunge. Normally olive oil and baking don't mix in my opinion.. years ago I tried olive oil instead of vegetable oil (when I ran out of it) in a cake and to describe the taste in one word.. NASTY! I love olive oil but I have to stick with my first impression- olive oil and baking don't jive. The olive oil flavor was just too overwhelming. The citrus and balsamic flavors were apparent, but I felt that I had just poured olive oil directly into my mouth. Some may love this recipe, but it was not a favorite for me. I would however try this one with vegetable oil and I am sure it would make the short list!

Just made these muffins and they are a wonderful texture...great taste. Perfect! A very nice change from the regular muffin. I was a bit nervous because they really smelled like Balsalmic Vinegar while they were baking but they don't taste in the least big like the vinegar. Very good!

I was fascinated by this recipe and its ingedients when I saw Giada make it on her show. It is easy and the flavors of the olive oil, balsamic vinegar and citrus zests are harmonious and wonderful. A lovely surprise for the palate!

I was surprised by how good these are. I added a little extra sugar to the batter because I like a lot of sweetness, but other than that, I did not alter the recipe. The lemon and orange zest give this a light, fresh flavor and blend perfectly with the olive oil and balsamic vinegar. There is no vinegary taste to these muffins. The tartness of the vinegar seems to cook out. The almonds add a nice crunch and I would not omit them as they significantly add to the overall flavor. This recipe made more than 12 muffins -- it was closer to 18 for me.

My kids (ages 6 and under) and I really enjoyed these muffins. GDL never fails to impress me with her recipes. They always work for me! I loved that these muffins had an unexpected sort of flavor with the olive oil and citrus combination. I was somewhat surprised that my kids liked them so much--they wanted seconds.

I couldn't believe how great these were. When you look at the ingredients, you would begin to wonder, but they were wonderful. Tasty, not too sweet. I added just a little more lemon and orange zest that is called for.
