Fish good, salsa bad 08/22/2007 at 09:52pm User: Anonymous User Rating: Halibut is a really nice fish and the salsa looked like it would be really good with it. Unfortunately, the flavors of the salsa did not go well together. I think it was mostly due to the very strong flavor of the raw fennel. It overpowered the fish. Like some of the other reviewers, I used an orange instead of the grapefruit which I think is a good move. I like nicoise olives, but not sure if they belonged here. I won't make the salsa again. My only tweak would be to chop the fennel a little finer than suggested in the recipe. I disagree with the reviews that claim the salso too overpowering, or too bland. I made the salsa first and I thought it was kind of blah. I used picholine olives instead and lemon rind as suggested, but added a bit of smoked sea salt. It perked up the flavor a bit, but not enough. So when making the fish, instead of baking it, I dusted it with Potlatch seasoning from Williams- Sonoma (you gotta try this stuff!) and seared it in a little vegetable oil for about 4 minutes, flipped it and then stuck it in the 375 degree oven for 5 minutes. Perfect. I usually love Giada's recipes, but this one was just okay. The problem was the salsa--specifically, my rendition of it. The grapefruit I used were just too bitter, and I didn't follow the instructions. Do "serve immediately"; if you let it sit in the fridge, it gets mushy. (This is probably a no-brainer for most of you.) Also, "top with the grapefruit," rather than tossing them in, so that the segments remain somewhat intact. The flavors were surprisingly balanced, and it was a fantastic way to eat light and still have fresh, interesting flavors. My husband does not like anise or fennel flavor, but the dish was so balanced that he absolutely loved it. It was simple, very flavorful, light and healthy. The cool fennel and grapefruit up against the hot, tender and flaky fish is a great combination. And I did add a little sugar to sweeten the grapefruit. This was such a nice light dinner... I'll definetly make it again. I also read Carla's review- and disagree. I think Giada's cleavage is Fantastic! She is a sweet, beautiful girl; and has great recipes. All of which are reasons we love her show! I did pan-sear the fish in olive oil instead of oven roasting, so it was not quite as figure friendly, but still a light dish. I won't use the zest of the grapefruit next time. I tasted before adding it & it was great. Added the zest & it became a little bitter. I fixed it by adding splash of limoncello liquor to sweeten it. Easy to fix & I wouldn't hesitate serving this to guests. I recommend buying a nice high quality fish to pair with this dish. I settled for something fresh but cheap and it definitely showed.
