I couldn't find whole wheat linguine, so I used whole wheat spaghetti instead. I anticipated that this might make it a little harder to evenly distribute the ricotta, so I reserved some extra pasta water (on top of what the recipe suggested) and added about 1/4 cup more to facilitate mixing. This recipe was great for a weeknight meal...So easy to make! The lemon makes it very light and I loved the sweetness of the tomatoes. I did use a little more ricotta than the recipe called for (I couldn't resist) and next time I would probably add more green beans and tomatoes because I thought the ratio of pasta to veggies could have been better. The recipe as written has too much pasta and not enough vegetables. I would suggest using only half the amount of pasta called for in the recipe. But the flavor was excellent once all ingredients were tossed together. For me, it can be awkward to evenly toss long pasta shapes with chunky ingredients, and with lessened moistness it was especially so with this linguine. Perhaps a nice alternative would be to use a shorter pasta shape, like gemelli or mini penne, cut the beans into 1 or 1.5 inch pieces, and quarter the tomatoes. I'll try this recipe again with these changes because, again, the flavor was delicious and the colors looked appetizing. People please use common sense when making any recipe from someone else, you have to season it to taste, if you notice they don't use alot of seasoning and you know you like seasoning then season it to your taste. Loved the creaminess of the low-fat ricotta and that it hardly added any extra fat or calories. I've never used it before, so this was a great find and will use it in other recipies. I didn't have the lemon zest so I used lemon pepper, which worked great. You really need the lemon flavor to give it some zing. I also added fresh basil (which I love), which added great flavor. I can see many other ways to change up this recipe and make it your own - use snap peas instead of beans, or add a little gouda cheese on top to give it a kick. Sun-dried tomatoes or a little sun-dried tomato pesto in this would be awesome too.... They are much sweeter than the regular ones. I also added a touch of freshly grated parmesean on top and some chopped fresh basil. If you don't like whole wheat noodles, they will taste grainy. I prefer Barilla PLUS noodles because they are softer but better for you than the white flour noodles. I also increased the amount of garlic, added some parmesan cheese and a drizzle of meyer lemon olive oil. My husband and I both really enjoyed it. After spending the time to make this dish, I just had to throw the whole thing out! It was truly inedible and a waste of time -- the ricotta cheese makes for a very unappetizing texture, and the whole dish is screaming for flavor. I tried to tweak the recipe to give it more taste, but no matter what I tried it was unsalvageable. After one bite, I tossed it. Also, the taste of the whole-wheat pasta didn't add a thing to the flavor department. Bland, bland, bland!!! On a side note, I wish the Food Network would showcase more of Dave Lieberman's cooking. Just about all of his recipes deserve 5 stars and yet Food Network continues to air more of Giada's mediocre cooking, even giving her more shows. In the past, I've tried her recipes just because they look appetizing on TV, but personality aside, I don't think her recipes are anything to brag about. This might be the last time I give one of her recipes a chance.
