The texture is so great, and its a lot easier than I thought it would be. I am able to keep them in plastic bags an reheat them in the microwave as needed for about 5 days. I like the left overs split in half, lightly buttered then sprinkled with cinnamon sugar. Fresh from the oven can hold on their own, or with nacho sauce or peanut butter. The reviewers who mention that the pretzels should be baked, then boiled, then baked again are mistaken. If you watch the show, Alton first demonstrates that simply baking the pretzels results in an inferior product. Then he says that the proper method is to boil, then bake -- exactly as the online recipe says. One other helpful tip -- on the show Alton mentions that each pretzel should be made from four and a half ounces of the dough. Measuring the dough for each pretzel makes for perfect results! Someone mentioned putting it in the oven FIRST and then boiling water and then putting it in the oven AGAIN. So, I did both. One batch I followed exactly what the computer recipe said and the other I did what the review said. I absolutely enjoyed them more after putting the pretzels in the oven first and then in the boiling water. Also, instead of just doing the water and baking soda I also tried water and a little salt. The water and salt kept them from being so chewy. Overall the recipe is wonderful and I loved them. It was a huge hit with my family as well. Although I missed seeing this episode, I looked up this recipe and made them. The instructions were super easy to follow and the pretzels turned out great! The only thing I didn't have on hand was Pretzel salt so I substituted kosher salt. They were perfect. These would also make incredible breadsticks. I'll be making these a lot. After the dough rises and you roll it out and put in on the baking sheets, the recipe says to then drop the pretzels into the boiling water/baking soda mixture. That is incorrect - first you must bake the pretzels for about 14 minutes and then drop them in the boiling water mixture, brush on the egg yolk mixture, salt and then bake a second time for 10-14 minutes. Hope this helps someone who is trying to make these and not getting the desired results. Almost as good as I had on a recent trip to Bavaria. All in all a very easy recipe even for an inexperienced baker like me. Watching the show definitely helped me with the flatten-roll-stretch-knot steps. The texture and flavor is the best I have tasted. There was no need to keep them covered and sprayed with water as seen on the show. Keep your surface oiled (not floured) and they are easy to roll. Thanks Alton!! 06/22/2007 at 05:48pm User: Dave from n/a, GA User Rating: First off, I was so excited that you were doing a pretzel episode as they are one of my favorite snacks and I've dabbled at making them for years. I really enjoyed your dough recipe, it was softer than the one I was using although the ingredients were nearly identical. My one knock on this is that you wimped out and didn't use the lye dip. Lye is essential for making authentic pretzels, and if handled carefully it is not dangerous. I buy food grade quality lye from internet sources (as well as the real pretzel salt that was mentioned). For anyone who wishes to try this, follow the same recipe but use 2 quarts of water and 2 tbs of lye in a non reactive pan (I use a stainless steel pan, be sure to NOT use aluminum). Use this dip instead of the baking sode dip and you'll see what a difference it makes, you won't need the egg wash. However, I will say that I used the egg wash after the lye dip just for kicks and I got an even better dark brown color and to me a small added dash of flavor. All in all a great recipe and show, I would have given 5 stars if not for the chickening factor. Respect your audience, we can handle sharp knives and advanced cooking techniques, thats why we love your show!! She had been asking for soft pretzels, but I hadn't purchased any. I'm so happy that I didn't, because these pretzels are better!
