This is so easy to make and even looks fancy on the plate with all the wonderful herbs. The chopped green onion (scallions) is a must it adds a fresh crunch to the warm rice. Instead of water, I boiled the rice in low sodium organic chicken broth, im sure you can use vegetable broth if you like. I make this rice dish all the time its so good! One time I even added some shredded parmesan cheese and let it melt in the steamy rice..Yum.

I had never tried basmati rice but made it along with the provencal scallop recipe. It was wonderful! Smelled so good, tasted sweet...just enough flavor without being overpowering. I didn't have fresh dill though so used a little dried...was still fantastic. So many nights I take shortcuts and use "quick" rice, where water and rice are equal measurements...I did 2 cups of uncooked Basmati (for just my husband and I).....we'll be eating that for a while, but that's okay...as Hubby says, we've found a new staple for the pantry! Delicious.

This is a good side when serving a rich main dish. I served this with a creamy scallop recipe and it was perfect. I used chicken broth instead of water.

A very tasty side dish and a terrific alternative to the boxed rice mixes...a bit healthier I imagine as well. Absolutely delicious and one to be made many times in the future. As an addition to the herbal flavor, I added a bay leaf to the water and let it cook with the rice until I added the other herbs as prescribed. Also, this recipe works equally well with dried herbs if you find yourself out of fresh. I used one teaspoon each of dried dill and dried onion (I've never seen a dried scallion), and two teaspoons of dried parsley...the results were just as good for my family!

I have never used dill in cooking before, and I liked it. the rice was very light, but good. I just felt like it was missing something. maybe a little acid.

My husband is a rice snob - and he even gives this recipe 2 thumbs up. It's easy and delicious. I sometimes add 3 bouillon cubes to the water to make it more savory.

The first time we made it, we forgot the lemon and it tasted over-salty. I've done it right since, but I still think it's a bit heavy on the salt. It's really good with the scallops, a great summer eveining meal. It is a little bit involved for a simple seafood and rice meal, so I like to have a helper.

This rice dish is ultra simple. The flavors are fresh and light. The best part is, since the herbs are added at the end, I can add parsley and scallions to the whole batch and remove some of the rice for my husband before adding the dill, which he doesn't like. I make it often.

I made this recipe from memory after running to the store for scallops. Used jasmine rice in the rice cooker, prepared the shallots, garlic and herbs. Cooked the main dish on side burner of bbq.(to avoid fishy smell in house) In less than 20 minutes we had a 5 star meal!!!! So easy but is extraordinary.(and impressive) I have already passed this recipe on to friends.

Prepared the rice for dinner tonight, together with the scallops. The rice had just the right taste with the herbs added in, which made for a perfect pairing. The scallops were so good and easy to make!!! These two dishes will be added to my recipe book. Delicious!!!

My fiance and I have been looking for quick and easy basmati rice recipes - we recently bought a 10 lb bag! When we saw Ina make her's, we were excited to try it! Tried this dish along with Scallops tonight and it was delicious. It had a very refreshing taste unlike that of plain or traditioial boxed bought long grain rice. The smell of the rice was very fresh and light. Would highly recommend.
