I modified the recipe as others had suggested by cutting back on the water. But I found at the end it had too strong of a vinegar flavor and I had to add some sugar to balance it. Next time I make it I'll try following the recipe and see how that works. Regardless, it was a complete hit and every last piece was eaten. Oh - another great thing was that I made the jam and the goat cheese the night before, so all I had to do before the party was warm up the jam and toast the bread. Not only does the sun-dried tomato jam work wonderfully on the crostini, but it works great on sandwiches. I throw it in the fridge and use the leftovers as a special little addition to my sandwiches. The jam takes a while to cook down (longer than Giada suggests), but it's well worth the wait! I added more onion (I love onions) and took another reviewers advice and added a bit less water, (a little less than a 1/4C). Even with less water it does take longer to cook down than stated in the recipe. Garlic-Herb goat cheese worked great on the top. Just soften the cheese by leaving out,cut a small piece from the corner of the package and squeeze out a small bit onto each crostini -- GREAT! Everyone loved it!
