When I saw this on the show, I thought I'd make it this week. Trouble was, I couldn't find oysters (out of season)! So I substituted crab claw meat and shrimp. I used 2% milk instead of half & half and simply prepared the boxed rice by the directions on the back, leaving out some of the butter as well. This may become one of our favorite dishes (favorite for me because it's quick and favorite for my partner because it's tasty). So maybe I didn't make the recipe exactly, but it served as an excellent springboard for ideas. Thanks for the inspiration, Paula!

My mother and I made this together and halved the recipe. We've never made oysters and this was easy. Also we cooked it for 30 minutes instead of 40 to accomadate the smaller amount to be baked. We substituted long grain wild rice for brown wild rice It took a little bit of time but turned out delicious- and I'm not even a big oyster fan:)

Being oyster lovers, my husband and I were eager to try this recipe. Due to the cost of oysters, I only put 1 qt. of oysters in this recipe. For the amount of rice this recipe makes you really do need 2 qts of oysters to balance things out. Next time, I think I'll only cook 1 sleeve of the Mahatma rice and keep the 1 qt of oysters and cook it in maybe a 8x8 casserole dish instead. Other than this, the flavors worked well together. Oh, I also added a jar of marinated artichoke hearts (which I rinsed lightly) at the very end of the oyster cooking time just to heat them through. They really added another level of flavor to an already great recipe.

LOVE Paula Deen, hated this recipe. After driving around to find a huge amount of oysters (very expensive) and then Mahatma doesnt offer "boxes" in So Cal, only bags, getting everything together, it was a huge disappointment.
