I made it last night for dinner with some cut up carrots, cucumbers and tomatoes and served it with my homemade whole wheat pita bread. Absolutely wonderful! Will definitely make again. I didn't modify the recipe at all, but next time I will use more edamame - I don't think 2 cups was quite enough and mine definitely wasn't as green as hers was. Came out delicious, and it was fast and easy! Only thing was I had to switch blenders due to the small volume - I don't have a food processor. Excellent!! I always follow the intructions exactly as stated the first time I try a recipe, and this didn't need any tweaking for my taste. Be sure to use very good olive oil, as this dramatically influences the dish. For a twist, you may want to add a pinch of cayenne! I'm glad to see more and more recipes involving them. I also used firm tofu(it's what I had in the fridge) and the consistancy was JUST fine. This is a REALLY big hit at a lot of dinner parties. This is good stuff. I added a tad more salt and about 1/2 tsp white pepper to punch up the flavors a little. Didn't really need it, but thought it wouldn't hurt. I'll definitely make this again. I am not a huge fan of Tofu, but I am a big fan of traditional hummus and eat it frequently! I have been trying to find more ways to include Edamame in my diet. This was so divinely delicious! You must also make the pita chips that go with it. A fast and satisfying snack -- thank gosh it is healthy because I couldn't stop at ONE serving! I shared it with three neighbors and they loved it as well! THANK YOU!!!!
