They were easy to make (Only used one cookie sheet)and everyone loves them. You can smell the lemon when you take them out of the freezer. Ellie made it look so easy I thought I'd give it a shot. The result: easy and delicious!! Be sure to only zest the yellow part of the lemon or else it will be bitter. The olive oil seemed strange to use, but overall the biscotti were very rich and flavorful. I followed the recipe without substitutions and was very pleased with the result. We buy a box of biscotti about once a week... needless to say we will be saving lots of money and preservatives by making these from now on. Im not sure if it was due to the olive oil or lemon zest. I also found the doughto be very crumbly when I sliced them diagonally even though I followed directions fully. I think the only thing I would do is chop up the pistachios before adding them in because they were hard to cut with the knief after the 1st bake.
