I understand that saffron is expensive but that is what is in paella so if you don't want to pay for saffron don't make paella. Also not all paella has seafood, I have been to Spain and I must say while most places do serve seafood paella by far my favorite was the chicken paella. Good recipe, fairly easy, and almost but not quite as good as the paella in Spain. I also added large shrimp and clams to the paella at the very end. In a large pot, add 1 1/2 cans(the really large cans - around 32 oz) of chicken broth and a package of Goya Sazon, I cooked the (12)clams for about 10 minutes and added the (21)shrimp for the last 5 minutes. Discard any clams that don't open up. This time I used white long grain rice, used smoked sausage instead of Chorizo and compensatated with a few dashes of Tabasco. No need for $affron if you cannot find it as in my situation. Also I added a half pint of heavy cream at the final stage for creamyness and used 5 oz. frozen whole kernel corn vs the peas. Any veg. will do. Either way, it's good to go! Also, feel free to use your own chicken seasoning. We used Old Bay vs. paprika. Be sure to tuck and check the chicken after the 20 minute mark! Add extra chix stock or cream/milk if needed. I didn't have saffron, so I found a rice packet with saffron already added. It worked just as well. I would highly recommend this recipe not only for taste but also for ease. I added a bit of dried garlic/parsley mix to the chicken coating because I love garlic, and I also added pimento stuffed green olives and some well drained canned artichoke hearts with the peas at the end. My husband and I both thought this was a great recipe, and I'm so pleased that it virtually cooked itself. It was nice not to have to stir the aborio rice as you would in a risotto. Not only was it delicious, it's far better than any other recipe I've tried for paella. I've made Michael Chiarello's Spanish Style Paella and that was a lot of work making the broth, etc. This one was so easy I couldn't believe it turned out so good! I, too, added some shrimp just before going to the "steaming" stage with the towel over the pan. I also used all chicken thighs because I had them on hand. This is a really fun dinner party dish. Put the paella pan right on the table and you can eat directly from it (traditional) or everyone can serve themselves. Yes, saffron is expensive but so is good perfume. But, you only use of little of each one, so it lasts a long time! Even better as leftovers, my family loved it. I added cooked shrimp at the end along with the peas. I did not have saffron so I used 1 1/2 packages of SAZON by Goya seasoning especally for paellas. A message to: Maryellen from Malvern, AR. Try the above mentioned seasoning. It is located at any food store in the seasoning section or the GOYA (spanish) section. Clearly you have to try the recipe in order to rate it! I bought a small container of saffron for $3.99 and I did not find that to be terribly expensive. But on to the important stuff...this is SO good. I made it for my husband on his birthday and paired it with the Rose Sangria (recipe from Bobby Flay). This was an excellent combination! Anyway, this recipe is easy, fast and full of flavor. I used 3 shakes of Tumeric instead of saffron to get the yellow color. I also used a pre-roasted chicken. I did fry it a little, skin on, just to get the flavor of it in the pan. Then deboned it and added the meat as per recipe. Used Arborio rice. Leftovers even better. This recipe was quick, easy and sooooo tasty. What amazed me was the yummy flavors that came through with so little added spice. I guess all the flavor from the sausage really soaks in. It cooked perfectly, just as Paula says. You do need a deep, large pan to make it in though. This is a permanent addition to my recipe book. Try this one, you won't be disappointed. Oh, and if this is a recipe for six they must be HUGE eaters. I would say more like eight to ten people. It gave it a nice flavor. I also added a few chili flakes, not too many, just to add a little kick. It makes enough for leftovers so I am glad I will have some for lunch at work today.
