The red bell pepper is a key ingredient - it really makes the flavor. I also added a few cloves of garlic and juice of half a lemon, which gives it a little zing. The added garnishes of chips, cheese, avocado and cilantro made a huge difference in the depth of the taste. I cut the chicken stock and the tomatoes in half because we prefer a thicker soup. Grilled the chicken before placing it in the pot (worked well with the fire-roasted tomatoes), used green & red peppers, 2 jalepenos instead of one (kept all seeds in), added a big can of black beans and omitted the avacado (waste of a topping for me). It's so quick and simple and satisfies that craving for something hearty and filling. I did add a can of black beans to bump up the protein and about a half a cup of frozen corn. Added the avocado and sour cream on top and it was excellent. I'll be making this one again! It was SO easy & my husband and I LOVED it! It is as good and even better than some I've had at restaurants. The tortilla chips at the bottom is a brilliant idea! And works just fine too! I think this makes more than what it states, but we ate it everyday for like 4 days straight! Will definitely make again! Next time I'll add a bit more jalepeno just to spice it up a little. I loved the addition of the scallions on top. We used the chips for dunking and scooping up the veggies and cheese, rather than putting them at the bottom (i like them to stay crisp). I didn't have fire roasted tomotoes so I used regular and added some chipotle chili powder which gave a smoky flavor. The only thing I would add is that you probably need to cut the chicken tenders into bite-sized pieces. Wonderful! I added a bit of garlic and used low-sodium chicken stock, but as a result, had to add more salt & pepper toward the end. The chicken itself was a little bland, so I also added red pepper flake the last 5-10 minutes of cooking to spice it up a bit. Next time, I will probably leave some of the jalapeno seeds to kick it up. The avocado really doesn't add anything at the end, though the dish is very filling!
