Finally a recipe that allows you to spread butter w/o falling apart. Family loved it. Flavorful and moist. My hubby would like to have more of a corn taste, though. And, have to admit, the store bought muffins still have it over for taste and texture, but not as healthy w/all the chemicals. I'll have to try to adjust this recipe to incorporate more corn flavor. We just love Ina and miss her early afternoon show, that's disappointing. I use to run home for lunch just to see her and relax at the 11.30 show.

I am not a big fan of cornbread but I liked this because it was fluffy. I used cornbread mix instead of cornmeal. Goes well with the Mexican chicken soup.

Finally, a cornbread that tastes good on its own (not slathered in butter or dunked into chili), has tons of flavor and is a universal crowd pleaser. I can't tell you how often I have been asked for this recipe.

I made this for my family this evening on the spur of the moment b/c it sounded really good and different from regular cornbread, and I had all the ingredients on-hand (except for scallions). I added the dry onions instead and omitted the onions from the top sprinkling, opting only to put cheese on top. Everyone LOVED it. I made sure I gave my 5 year old a piece with jalape?os picked out and she even liked it. Everyone else raved about it. My husband had 2 big portions. This is a keeper - THANKS!

I made this last night for my boyfriend and I, and we both loved it. I omitted the scallions and halved the recipe. It was SO delicious and it baked beautifully. It puffed up a lot, almost like a souffle. Will make it again and again!

Wasn't spicy... but wasn't expecting it to be that spicy when I took out the ribs and seeds. Incredibly moist and flavorful. It had the constency of a cake. Not sure if it's a "traditional" corn bread or not, but I thought it was darn good.

I am a true cornbread lover and sort of a cornbread "snob" so the fact that I really love this recipe says something. Please try it when you need a cornbread that is rich and bakes up beautifully, enough for a crowd.

Love Ina, but this recipe just didn't taste like cornbread to me. The texture is akin to a moist cake, which is fine, but all I taste is the jalapeno and scallions. It needs some sweetness - not much - to counter the heat. Threw out the leftovers. I'll continue my search for the perfect cornbread...

This cornbread is really good. I don't know what some people did wrong to make it 'tasteless.' Because it certainly is not. It is very rich and cheesy. This cornbread isn't as 'corny' as the Betty Crocker recipe I usually make which has equal parts flour to cornmeal. Also, this recipe is not sweet. Which is why I like it. I think cornbread should taste like corn not like sugar. If you are used to the store-bought or restaurant style (northeast) cornbread, this is not that. It is better!

I love spicy food so I added extra jalapeno. The final product wasn't spicy at all, but you can still taste the pepper flavor. I also added one small can of corn kernels which made it extra nice!

Unlike some of the other reviews, i had no problems with this recipe. It was very moist and had really good flavor, especially hot out of the oven with some butter on it. I would highly recommend this recipe.

Very easy to prepare and it came out so moist, not like any cornbread Ive ever had before. Because of the kids I replaced the jalapeno with diced green chilies and since I didnt have yellow cornmeal, I used a box of corn muffin mix and the results were great. I also used 4 large eggs since I didnt have 3 extra large and I cooked it about 10 minutes longer until the top was golden brown. I was surprised that it puffed up in the oven but it remained puffy and not dry at all. I will never make regular cornbread again, this just replaced it.

Read reviews but decided to try this recipe. was disappointed with the results. cornbread was extremely moist almost to a mushy consistency. thought flavor was fair but think we like more of a sweet cornbread. just wasn't a favorite and wont keep this recipe.

I made this cornbread this morning for a dinner party tonight. I can't imagine people saying it didn't have alot of taste-my husband and I (of course) had to make sure it tasted ok and it was very tasty. The next time I make it I would use 1/2 of the butter-it is just a bit much for us, I also used a little extra jalapeno. Love the recipe Paula!

Maybe I did something wrong or maybe I've been spoiled by my mother's jalapeno cornbread, but whatever the reason this recipe turned out pretty bad. The bread was very dry and flavorless. I'm disappointed. It wasn't spicy or cheesy enough!

Next time I will cut down on butter by adding more milk. I'm horrified at 1/2 pound of butter, even if the recipe is for 12. Also, these are large servings so cutting recipe in half works well too. Enjoy

If you want traditional dry cornbread that can be crumbled into your milk, stick to your grandma's recipe. However, if you want a moist, kicked-up departure from the traditional, give this recipe a try. The folks who ended up with bland, flour-tasting results should blame their cooking skills and not the recipe. This cornbread is great!

This "cornbread" had no flavor whatsoever. The crusted cheese on top was greasy and added no flavor, just fat. Reminded me of cheesebread you'd get at Pizza Hut. The texture was OK when it was first cooked, but I tried to reheat it and it became pasty, doughy and inedible. This is not real cornbread, like another reviewer said, these are hocakes. GROSS! Find another recipe.

THIS IS NOT CORNBREAD!!!!!!THIS IS AN ALMOST BISQUIT with a little cornmeal mixed in, a hocake. I had to make this just to see what was being passed off as cornbread...I laughed so hard, cornbread, yea right... Real cornbread is made of cornmeal, fine or coarse grind. The cheese makes it and keeps it moist and when a jalapeno has been de-seeded and de-veined, of course it's not hot, the hot has been cut out! All butter, no way, we use a good oil, heated, 1 egg, and BUTTERMILK NOT MILK..and it's cooked in a 57 year old cast iron skillet...that has been used for cooking cornbread and only cornbread...I hope I haven't busted that cornbread bubble, but...YA'll ARE EATING A SOUTHERN HOCAKE, NOT CORNBREAD...Boy, I'd hate to give ya'll the recipe for real Mexican Chicken Soup...

This is the most delicious cornbread I've ever made (or eaten, for that matter). So many cornbreads are dry and crumbly. This one is moist, rich and delicious. The jalapenos aren't too much, so don't be afraid to use the full amount. I made half the reicpe and used an 8x8 pan and it cooked perfectly. I love Ina!

Really, really disappointed. Like the other reviewer, I agree that it was very moist, but had no flavor - it tasted like flour! I've reviewed the recipe to make sure I didn't change or leave out anything. I've noticed that other cornbread recipes have about a 1:1 ratio of flour to cornmeal, while this recipe has a 3:1 ratio of flour to cornmeal. Maybe that explains the bland taste?

I tried this recipe immediately after seeing it on tv. It turned out great, and that's coming from a true Southern boy! I would suggest following the recipe to a "t" since I substituted sharp cheddar, and I think the white sharp cheddar (like the recipe calls for) would have been a better choice. Also, don't scrimp on the jalapenos. I used less, and I should have used all 3 tablespoons. FYI, I used a 13" large round black skillet, and it came out perfectly. Can't wait to try this again! Ina rocks!

This recipe is a "keeper". It was moist and had a great edge with the cheddar cheese. The afterburn from tha jalapenos made it a great marriage partner for my favorite chili recipe. The next morning I caught my husband cutting it from the pan to have with his coffee. Enough leftover to freeze half for later in the month. Go for this one. A good take-along to potluck too. Very guy friendly.

I was making Ina's Mexican Chicken Soup this evening and I almost pulled out our favorite cornbread recipe (Paula's layered cornbread) but decided to try this one and boy were we glad we did. This is our new favorite. I halved the recipe and baked in a 8x8 pan and it was perfect!!! Next time I do think it would be nice to add some green chilis as well as the jalapeno. Perfect texture!

Made this tonight w/ the Mexican Chicken Soup. Very tasty, but next time I make it, I'll add more jalapeno peppers or maybe a little chopped serrano pepper for more heat. Two sticks of butter and all that cheese make it high in fat, but it was good.
