To make it healthier since I was feeling guilty with all the butter, sour cream and cheese, I used whole wheat pasta and lite sour cream! You could not taste the difference between wheat pasta and regular pasta. Do not cook for more than 30 min, it started to burn, and I even covered it with tin foil. I found that the taste was less cheesy and a lot more mild as it cooled. I also do not think this keeps well as a left-over. However, all of my guests enjoyed it thoroughly. Tabasco + 1 cup white Cheddar to the 2 cups yellow. Have prep'd, also, using half Pepperjack and half yellow cheddar (no tabasco). I believe we Americans have 1492 recipes for mac and cheese!! Everyone loved this recipe, including my very particular 14 yr old. Lots of cheesy taste, with a little bite, and very creamy. Worth making this - you won't have to worry about leftovers. |
