This is a very good recipe and not too difficult. A couple of substitutions that I have made for you to consider. I use cut up chicken breasts for the beef and ground pork for the ground beef. Also I use chicken stock instead of beef stock. I also add some red pepper flakes and 4 jalopenas seeded and devined chopped up and about 4 cloves of garlic minced. Enjoy!

we found this to be just like a mexican lasagna, the tortillas make the noodle effect. we added a small can of jalapenos in with the meat, would probably be good with some sour cream or salsa on top. you just need to use a ladle to get most of the juice off before stacking.

this recipe was awsome, but since i scewed up and used a big cassarole pan i only got about 3 thin layers from the chile...Bur even though it was awsome, and even better the day after

Recipe was incomplete and I fear not tested. Flour tortillas became sheets of gooey dough. We had a few bites and threw the rest in the trash.

My husband loves this casserole!! I happened to have a bunch of "the guys" over when I made this one and they devoured it before I could sit down and try it myself!! The requests never stop coming for this one.

If I would have used all of the beef stock called for, this dish would have never fit into the 9 x 9 square pan it called for. The flavor was excellent.

I am a vegetarian, and decided to substitute the meat with both Soy Crumbles for the ground beef, and tofu for the stew meat. WOW! I am so glad I was able to turn it into a vegetarian meal, because this is something I would have been upset to miss out on!!!! The flavors all played off each other very well. And the "gooey-ness" was SO GOOD! I am typically a "30 minute meals: gal, but this recipe was worth the added time & preparation to make! I have suggested this to friends to make already!!!

I made this in a 9x8 size dish and was able to make 9 good-size slices from this recipe. There was chilli left over, so we added red beans and bowtie pasta and made another dinner (for 2). There were complaints from other reviews about it having too much liquid-I drained the tomatoes well and cut the beef stock down to 2 1/2 cups. I used a slotted spoon to fill the casserole dish and it was okay. The flavor was pretty good, but some people may like it a bit more spicey. Overall, pretty good. Will definatley make it again!

First of all, I don't see how anyone fit this in a 9x9 square dish. I had to transfer it all to a bigger one, which was a mess. This was a watery casserole that wasn't very flavorful in my opinion. I won't be making it again.

My family loves this recipe. It is delicious and looks beautiful with all of the layers. It isn't the quickest dish to throw together, but it is easy and well worth a little extra effort.

This was good but not great. The flavors were good but I prefer my tex-mex with more spice. If I make it again, I would definelty add cayenne pepper or jalapenos to give it more zip.

never convine 2 different cheese Certainly Cheddar cheese and Monty Jack cheese the least, we dont use those cheese, you might try the asadero yan is a kind of manchego, and th MJ works fine for this recepe, but remember the convination makes the cheese flavor go sky high and tex-mex avoids that.

Pretty good but not very much kick to it. The tortillas were pretty soggy and there was a lot of extra juice. I would recommend draining the chili mixture before layering.

I came home late from work and still had plenty of time for this one. I didn't have stew meat, so I used 1 pound ground beef, omitted the tomato paste and beef stock, added half cup of salsa and 1 can stewed tomatoes and BAM! good dinner fixens! This one's going in my recipe box....

I have LOVED every Emeril recipe I have tried but this one flopped...first I have no idea how you are supposed to fit all this in the reccomended dish size, second it was watery, and third it was bland. Wouldnt make again. But that said I ususally adore his recipes!

this is one of the worst things i have ever cooked it should be called "chili with tortillas" and bland as ever. this made me mad it cost 15 to 20 if you dont have all the stuff you need and it taste like wet cardboard. there has to be something better for you to try so move on please move on.

Great recipe, have been making it for years. Probably the 1st one I copied off of FN. When my son was much younger, this was the recipe he wanted when asked what he wanted for dinner. He is now 25 and still requests it. Very good as is

Usually Emeril has better ideas than this, but flour tortillas just DO NOT work in a casserole in my opinion; they turn in to a big, gooey, wet mess. Use corn tortillas if you want to try this casserole. Also, use a larger dish.

My family LOVED this dish! I made a few changes tho...I used a 13X9 baking dish. When layering the tortillas I used two for each layer (the 10# flour tortillas). I also tried the beef cubes the first time but didn't care for the texture. The second time I used 2# of ground beef instead. A favorite of my family!

I thought this had great flavor. My beef came out a bit tough. My error I'm sure. We tried it as leftovers the next night and the tortillas were soggy. Don't recommend it the next night.

my family really loved this. i didn't have a 9X9 pan, so i used a deep dish pie plate and it worked fine. i also drained the tomatoes so it wouldn't be quite so juicy.

I was really hoping that this would be a wonderful dish, but I was disappointed with it. It was a little watery and just lacked alot of flavor. I didn't particularly care for the flour tortillas either. I would not make this again. Sorry Emeril, this one is not a winner.

After reading the previous reviews, I decided to try this and was completely disappointed! The recipe made way too much "chili" and I still have a ton that didn't fit into the dish. It was very bland. The tortillas got very soggy. It took a lot longer to make than suggested in the recipe. The cheese on top made it very greasy. One suggestion if you do decide to try this, change the way you layer - I would put the cheese on top of the chili and not the tortilla. This is not a recipe I would make again.

My entire family loved this meal! Since I cook gluten free, I substituted corn tortillas for the flour ones, and they were perfect! We served it with salsa verde and a mild salsa, to meet everyone's tastes.
