Delicious 12/27/2004 at 05:37pm User: ANNETTE from Miami, FL User Rating: This is absolutely delicious and for you carb counters at there the carb-lite tortillas are just as wonderful! Great Mexican Feast 11/09/2007 at 01:44pm User: Donald from Newport Beach, CA User Rating: This is a very good recipe and not too difficult. A couple of substitutions that I have made for you to consider. I use cut up chicken breasts for the beef and ground pork for the ground beef. Also I use chicken stock instead of beef stock. I also add some red pepper flakes and 4 jalopenas seeded and devined chopped up and about 4 cloves of garlic minced. Enjoy! My inlaws loved it 11/06/2006 at 11:04pm User: lory from twin falls, ID User Rating: My inlaws liked it so much they copied the receipe down. it was very good great recipe, but pan size is wrong. 11/04/2007 at 08:55pm User: JENNIFER from Del City, OK User Rating: this is a great recipe, super easy to make and great flavor, but I was lucky to get all the ingredients in a 9x12x4 pan yummy 10/26/2007 at 10:42pm User: mary from plymouth, MI User Rating: we found this to be just like a mexican lasagna, the tortillas make the noodle effect. we added a small can of jalapenos in with the meat, would probably be good with some sour cream or salsa on top. you just need to use a ladle to get most of the juice off before stacking. good, but dont use a big pan 10/24/2005 at 11:33pm User: Joseph from Burlington, NJ User Rating: this recipe was awsome, but since i scewed up and used a big cassarole pan i only got about 3 thin layers from the chile...Bur even though it was awsome, and even better the day after Gooey is right! This was so bad! 10/22/2007 at 11:22am User: Roberta from Forney, TX User Rating: Recipe was incomplete and I fear not tested. Flour tortillas became sheets of gooey dough. We had a few bites and threw the rest in the trash. One of the Best! 10/20/2006 at 10:56pm User: Anonymous User Rating: My husband loves this casserole!! I happened to have a bunch of "the guys" over when I made this one and they devoured it before I could sit down and try it myself!! The requests never stop coming for this one. confused 10/13/2007 at 05:02pm User: jennifer from st paul, MN User Rating: If I would have used all of the beef stock called for, this dish would have never fit into the 9 x 9 square pan it called for. The flavor was excellent. very good 10/12/2004 at 03:22pm User: DOTTIE from Quincy, IL User Rating: my family loved this recipe. Tex-Mex YUMMY Casserole! 10/11/2007 at 12:27pm User: Anonymous User Rating: I am a vegetarian, and decided to substitute the meat with both Soy Crumbles for the ground beef, and tofu for the stew meat. WOW! I am so glad I was able to turn it into a vegetarian meal, because this is something I would have been upset to miss out on!!!! The flavors all played off each other very well. And the "gooey-ness" was SO GOOD! I am typically a "30 minute meals: gal, but this recipe was worth the added time & preparation to make! I have suggested this to friends to make already!!! WILL MAKE IT AGAIN AND AGAIN 10/02/2004 at 08:41pm User: MARIAN from orlando, FL User Rating: MY HUSBAND LOVED IT. HE LOVES TO EAT IT WHEN HE'S WATCHING FOOTBALL. THANKS EMERIL Great for leftovers 09/30/2007 at 07:31pm User: Anonymous User Rating: I made this in a 9x8 size dish and was able to make 9 good-size slices from this recipe. There was chilli left over, so we added red beans and bowtie pasta and made another dinner (for 2). There were complaints from other reviews about it having too much liquid-I drained the tomatoes well and cut the beef stock down to 2 1/2 cups. I used a slotted spoon to fill the casserole dish and it was okay. The flavor was pretty good, but some people may like it a bit more spicey. Overall, pretty good. Will definatley make it again! Watery and bland 09/26/2007 at 08:42pm User: A from Lumberton, TX User Rating: First of all, I don't see how anyone fit this in a 9x9 square dish. I had to transfer it all to a bigger one, which was a mess. This was a watery casserole that wasn't very flavorful in my opinion. I won't be making it again. fabulous 09/21/2007 at 07:54pm User: Anonymous User Rating: My family loves this recipe. It is delicious and looks beautiful with all of the layers. It isn't the quickest dish to throw together, but it is easy and well worth a little extra effort. Good, with changes 09/04/2006 at 09:18am User: Anonymous User Rating: Use taco seasoning instead of chili, top with Ranch or sour cream next time. good but not great 08/26/2007 at 08:47pm User: Anonymous User Rating: This was good but not great. The flavors were good but I prefer my tex-mex with more spice. If I make it again, I would definelty add cayenne pepper or jalapenos to give it more zip. Just a Cheese Problem here 08/23/2005 at 05:42pm User: Anonymous User Rating: never convine 2 different cheese Certainly Cheddar cheese and Monty Jack cheese the least, we dont use those cheese, you might try the asadero yan is a kind of manchego, and th MJ works fine for this recepe, but remember the convination makes the cheese flavor go sky high and tex-mex avoids that. Outstanding 08/17/2006 at 11:30pm User: Anonymous User Rating: Everybody loved it.There wasn't any left and I wanted more. Good easy Meal 08/08/2007 at 06:42pm User: angela from Winnie, TX User Rating: this was a nice easy dish to make and if i didnt have the tortillas i still have a great Chili!! Gooey Good 08/02/2007 at 10:17pm User: Deborah from San Antonio, TX User Rating: My family loved this and we had enough for leftovers! Straight from the church's cookbook!! 06/20/2004 at 05:23pm User: Anonymous User Rating: Yes, it's just wonderful, and just about everyone will like it. This recipe is in a church cookbook for take-along pot luck dinners. We call it Enchilada Casserole. 06/15/2004 at 12:38am User: Anonymous User Rating: A lot of food 06/04/2007 at 02:53pm User: Charla from Catoosa, OK User Rating: Pretty good but not very much kick to it. The tortillas were pretty soggy and there was a lot of extra juice. I would recommend draining the chili mixture before layering. Quick and Tasty 05/29/2007 at 09:57pm User: Sheila from Golden, MT User Rating: I came home late from work and still had plenty of time for this one. I didn't have stew meat, so I used 1 pound ground beef, omitted the tomato paste and beef stock, added half cup of salsa and 1 can stewed tomatoes and BAM! good dinner fixens! This one's going in my recipe box.... so good 05/25/2005 at 02:11pm User: Anonymous User Rating: This recipe was so good, my family was so happy. Not Impressed 05/10/2005 at 11:08pm User: JULIET from Denver, CO User Rating: I have LOVED every Emeril recipe I have tried but this one flopped...first I have no idea how you are supposed to fit all this in the reccomended dish size, second it was watery, and third it was bland. Wouldnt make again. But that said I ususally adore his recipes! bad this is no good 05/08/2006 at 10:02pm User: Trey from Houston, TX User Rating: this is one of the worst things i have ever cooked it should be called "chili with tortillas" and bland as ever. this made me mad it cost 15 to 20 if you dont have all the stuff you need and it taste like wet cardboard. there has to be something better for you to try so move on please move on. Yum 04/29/2008 at 08:15pm User: Anonymous User Rating: This was easy and really cheesy. Loved it. My son's favorite 04/22/2008 at 06:21pm User: margaret from Carmel, IN User Rating: Great recipe, have been making it for years. Probably the 1st one I copied off of FN. When my son was much younger, this was the recipe he wanted when asked what he wanted for dinner. He is now 25 and still requests it. Very good as is Revolting 04/21/2008 at 02:32pm User: Anonymous User Rating: Usually Emeril has better ideas than this, but flour tortillas just DO NOT work in a casserole in my opinion; they turn in to a big, gooey, wet mess. Use corn tortillas if you want to try this casserole. Also, use a larger dish. Rob 04/18/2007 at 12:42pm User: Rob from Sunbury, OH User Rating: My family LOVED this dish! I made a few changes tho...I used a 13X9 baking dish. When layering the tortillas I used two for each layer (the 10# flour tortillas). I also tried the beef cubes the first time but didn't care for the texture. The second time I used 2# of ground beef instead. A favorite of my family! Good, but not as leftovers. 04/18/2006 at 02:06pm User: Dani from Clearwater, FL User Rating: I thought this had great flavor. My beef came out a bit tough. My error I'm sure. We tried it as leftovers the next night and the tortillas were soggy. Don't recommend it the next night. Delicious taste...a little on the greasy side 04/01/2005 at 09:39am User: MAYA from Marietta, GA User Rating: I loved the flavors of this recipe, though my family and I thought it was a little greasy. I will try it next time with leaner ground beef and maybe 2% cheese. Sooo Good 03/06/2006 at 08:35pm User: Lori from Adrian, MI User Rating: my family really loved this. i didn't have a 9X9 pan, so i used a deep dish pie plate and it worked fine. i also drained the tomatoes so it wouldn't be quite so juicy. Quick 02/25/2007 at 12:16am User: Sacha from Cleveland, TX User Rating: Quick & pretty good!!! It is like a fast way to make enchiladas. Awesome 02/21/2005 at 05:28pm User: PATTY from Dana Point, CA User Rating: This has the best flavor and makes quite a bit so leftovers are always available. Great! Great TEX MEX 02/19/2007 at 12:14pm User: Dennis from Racine, WI User Rating: I thought the time to prepair was good and ez and the end result was great. The flavors of this dish I really liked. I didn't love it, but it was ok. 02/06/2007 at 11:55pm User: Anonymous User Rating: We probably won't make this one again. It took a little too long for all the steps of cooking and cooling. I would have liked the addition of some beans or other vegetables as well. Yummy! 02/06/2005 at 11:04am User: ANGELA from Las Vegas, NV User Rating: My husband doubted this recipe. He made it and was wonderfully surprised. Great recipe for a quick dish for the whole family. Disappointed 02/03/2006 at 03:26pm User: janice from warrenton, MO User Rating: I was really hoping that this would be a wonderful dish, but I was disappointed with it. It was a little watery and just lacked alot of flavor. I didn't particularly care for the flour tortillas either. I would not make this again. Sorry Emeril, this one is not a winner. A big disappointment 01/23/2008 at 12:51pm User: Sandie from Burlingame, CA User Rating: After reading the previous reviews, I decided to try this and was completely disappointed! The recipe made way too much "chili" and I still have a ton that didn't fit into the dish. It was very bland. The tortillas got very soggy. It took a lot longer to make than suggested in the recipe. The cheese on top made it very greasy. One suggestion if you do decide to try this, change the way you layer - I would put the cheese on top of the chili and not the tortilla. This is not a recipe I would make again. we loved this 01/15/2008 at 11:05pm User: Anonymous User Rating: My entire family loved this meal! Since I cook gluten free, I substituted corn tortillas for the flour ones, and they were perfect! We served it with salsa verde and a mild salsa, to meet everyone's tastes. Loved it! 01/01/2005 at 03:15pm User: NANCY from Mountlake Terrace, WA User Rating: We are loved it. My husband added Chihula hot sauce to spice it up! |
