My husband is Colombian and hasn't had this soup since he was a kid. He loved it. I never had or heard of this before but I loved it as well. This was delicious and simple the flavors were fantastic together. The one thing I did different was add chorizo to the soup. My husband has to have meat in every meal which worked out great because if you don't want to make the little burgers you can have the soup alone with some crusty bread. Thanks for this excellent recipe keep them coming. I cooked it the same day I saw it and it was soooo gooood. We are a latino family and familiar with the green plantain taste; therefore this was not a new introduction for us. I will be making this a lot during those cold winter days. The flavors didn't really seem to blend for me. I'll still to boiled, baked and fried plantain. Maybe, I'm just not a fan of Latino food? Definately love authentic mexican and tex-mex. It turned out good, but I don't like the taste of boiled plantains. That ruined it for me. My friend who is of Spanish decent said it was good. We do not use carrot, celery or (yuk) cilantro. We used to make it with chicken or beef stock, used onion, bell pepper, garlick, the olive oil and water with the chicken or flank seak. Satl and pepper to taste. I don't like the taste when we've used the raw plantain and boiled them in the soup.
