This recipe didn't spread at all, didn't have enough almond taste, and was a little too cakey. Next time I will punch up the Almond to a full Tsp, and cut back the flour to 3/4 a cup, or 7/8. Also, I will punch up the sugar to 1 1/4 cups. They're fattening as heck but they were really popular with my teenage nieces. I like to decorate them by dipping them or drizzling them in chocolate. I used an electric cookie press by Wilton and it made making them so much more fun! The dough was impossible to put through the cookie press; even chilling the dough did not help. I tried adding a bit more flour and sugar, but this made no difference. The cookies also flattened out while baking with no discernible shape from the press. The cookies also did not taste very good. Like a previous poster, mine melted into round, flat cookies, with no distinguishible design and a little brown around the edges. They were very delicate and tasted fine (almost breaking when picked up). So, I melted some chocolate chips and sandwiched it between two cookies. It gave them some stability and added some extra chocolate taste. I softened the butter in the microwave for 20 seconds and creamed it before adding the powdered sugar. I beat the butter and powdered sugar(using regular beaters -- I don't own a fancy mixer) until it was the consistency of frosting. I then slowly added the flour/baking powder mixture three different stages. Since I don't own a cookie press, I rolled the dough into balls (a rounded teaspoonful -- app. 1"/ea.) and used the bottom of a beer mug to flatten them (I sprayed with bottom of the mug with butter-flavored cooking spray and dipped it in a bowl full of colored sugar sprinkles). Each batch baked perfectly in 8 minutes! I only got 3 dozen cookies out of each batch using this method. My 14 year old daughter loved them and we had a lovely experiece decorating them. It was easy dough to work with and I didn't have to change a thing. My cookie maker is SAWA brand that my mother handed down from who know how many decades worth of use. So even an old antique apparatus works with this recipe. Result .. tender and tasty. The recipe was made not once but twice out of fairness. I followed the recipe exactly as stated (using the finest ingredients) and must report that it was the worst tasting cookies I ever made in 41 years of baking! The flavor is so bland in the first run that I chopped up cherries and placed them gently around the ea. cookie for flavor. The cookie press shapes melted into blobs before they were fully baked. It tastes even better than the ones I buy in the top NYC bakeries. They are so easy to make and melt in your mouth. The only thing I do differently is use all vanilla extract instead of the almond extract, just because I am a huge vanilla fan. To make them extra delicious, I take two and put raspberry jelly in the middle and dip half in chocolate. Amazing! They turned out really well! I did add about 1/4-1/2 tsp of salt, though. Thought it was wierd the recipe didn't call for it. I also split the recipe in half and added a scoop, about 1/8 cup of Cocoa power and added about 1 Tbsp milk. Turned out really well. I also didn't have powered sugar on hand so I substituted with granulated sugar. I thought they came out well, as soon as I realized my gun would NOT work on parchment paper.. so I sprayed my cookie sheet and they came out perfectly! I do use a lot more almond extract however. My daughter likes to make these too. The only time she's had trouble with consistency is when she softens the butter too much. Then its a little bit of a trick to refrigerate the dough to the right consistency. |
