I would make it even without the bacon because the gruyere gave it so much flavor. To those of you who feel it's necessary to not only criticize the food, but also Rachael Ray herself, GROW UP. To Carol from Austin TX, try using the center-cut bacon that Rachael used on the show. That should reduce the amound of bacon grease you find in the pan after rendering the meat. And a note to 'Anonymous' of 9/15/07, Quiche Lorraine does not have spinach in it, it has cheddar cheese and bacon. Quiche Florentine is made with spinach and Swiss cheese. Spinach is always a wonderful addition to macaroni and cheese (and so many other dishes) but you won't find it in a standard "Lorraine" dish. I wonder what this will look like after a night in the fridge, will it harden? Who cares, it is a great family pleaser. Next time, may just keep a little bacon grease in the pan to fry the onions. 1/2 lb turned out close to 1/2 cup grease. I realize that people have experienced different recipes but the thing about the mustard and nutmeg that makes them go "hummm"? I grew up with this and it isn't original. My husband, who doesn't like anything fancy, and my 8 year old son loved this pasta. My son said he would give this pasta a 10! This was very easy to make and both my son and hubby were able to help with this. Hubby whisked the sauce on the stove and my son was able to help easily. My son loved the flavor of the cheese. I thought for sure he would complain about having onions in his macaroni and cheese but he said he didn't care and finished it all. I loved having the crunchy bacon mixed in with the pasta. We will definently make this again. I made as written except added a box of thawed, drained frozen spinach, mixed the bacon into the pasta mixture and put all of it into a greased casserole dish, topped with seasoned breadcrumbs and Parmesan, then baked in a 350 oven til bubbly and browned. It's no longer a 30 minute meal, but who cares, if it tastes good. The bacon and onion just bring ordinary mac and cheese to a whole new level. I subbed in a sweet garlic mustard because I don't like dijon, and I had no gruyere on hand so I used a shredded mexican blend. Also, I used 1% milk instead of whole milk and it turned out just perfect. This is definitely going in my favorite recipes binder!!
