I put the finished chicken on a rack to cool while I finished the rest so it wouldn't get soggy laying on a baking sheet. The salad on top was a great idea. I had first thought that the parmesan cheese might be a bit over powering to the chicken, but it has just the right amount of bread crumbs and cheese. It was not complicated at all, or time consuming for that matter. It would be a wonderful dish to fix to "wow" a special guest. We loved it!!
