The curry just about blew my head off my shoulders and the mint made my toes curl. I will try this again with less curry and no mint. I will reserve my use of mint for chewing gum and mouthwash.

The eggplant was very, very bitter, possibly from the curry powder I used.

I made the eggplant tonight along with the Tandoori Chicken, Pita Chips and Tzatziki dip (for that I used Emeril's recipe as I am very particular about this type of dip.) My husband and I like curry so that's not a problem but the eggplant tasted very bitter though I believe it was as cooked as it well as it could be. I made it on top of the stove using a grill pan. I'll probably try it again on the outdoor grill and vary the season to see if it is a keeper or not. I'm always willing to say this may have been "user error" but it is always possible that it was a "design flaw" as well. ; )

These were a bit bland. I'm sure I could have used more curry powder and salt/pepper, but they just didn't do much for me. Perhaps on an outdoor grill it would be better. I added some cottage cheese on the side to round them out.
