When asparagus are on sale in the summer, I stock up and make gallons of this soup. OK, maybe not gallons, but a lot! I then pop it in the freezer and an enjoy it all winter!

Enjoyed this recipe - was easy. I think I might use cream next time instead of the boiled shredded potato. It gave the soup a look that I wasn't crazy about.
