I took the advice of others by adding some garlic and 1 carrot to the existing recipe and the result was simply amazing. The soup was savoury with a hint of sweet. Today we added some baby carrots, a couple cloves of garlic (added with the onion), a pinch of nutmeg and a cinnamon stick to the broth. (Remove the cinnamon stick before pureeing, of course) Also, we didn't have any ginger root, but did have some candied ginger pieces. We cut up 2 (1/2 inch X 1 inch) pieces of that, and sauted that in with the onion and garlic. Delicious. I have added, in previous makings of this soup, a dash of pumpkin pie spice, too. Very tasty. The only thing missing is the oven temperature. I preheated my oven to 400 degrees and it works just fine. I added a sprig or rosemary to the broth while it simmered, and removed it before adding the squash. I used butternut squash and acorn squash and tripled all the ingredients. As it was written it made very little soup especially since it needs NO water. In addition to the rosemary, I added a little maple syrup, brown sugar and FRESH nutmeg. After a mad dash to the grocery store for the required ingreadients, I made this soup tonight. I had to tweak the recipe a little to get more of a "rounder" flavor. I used 1 tsp. ground ginger instead of fresh. I used canned chicken broth, but added a few sprinkles of chicken broth granules to give it a hardier flavor. The soup tasted too flat without the chicken boulion granules. I also wanted a creamier texture, and added fat-free half and half to taste when processing the soup in the blender. This produced a rounder, cramy, "bisque-like" soup. After re-heated the processed soup, it was still missing some "bang." I remembered the Einstein's soup had a sweeter taste, so I added 2 tsp. sugar to the re-heated soup, and this definitely rounded out the flavor even more. Do not skip the sour cream as a garnish in the end. It gives the soup a yummy "kick", and wouldn't be the same without it. With all the modifications, my soup now tasted very close to the Einstein's soup. I think if I had made this recipe without the Einstein's soup to compare to, I would have rated this much higher. It was definitely a yummy soup, but needed some modifications to produce a more rounded soup with hardier flavor. I found it too mild without the modifications for my taste. I found this one and I must say it is SUPERB! I found that it needed more ginger. It is a perfect light dinner/lunch and you can use vegetable broth in place of the chicken broth without any loss in flavor. EXCELLENT RECIPE! Instead of butter i substituted extra virgin olive oil, and it tasted fine. This is the 2nd time I've made this, and it gets better everytime.
