Since there is a lot of spicy going on, I'm grilling the steak plain. I did not have tomatoes so I used roasted red peppers.The sauce is great. It is spicy so instead of using 2 t. of chipotle add a little at a time and add to taste. Cut the potatoes in wedges and grilled them, then tossed with the aioli along with cilantro,diced red and yellow peppers for crunch and green onion. Wow! What a hit. I made extra sauce and put it in a bowl next to the potatoes just in case some of my guests didn't like it. The bowl of sauce was gone before all the potatoes were. People were standing next to the table dipping everything I served into the sauce. It's that good.
