I made it for a romantic dinner with my boyfriend, and he hasn't stopped asking for it since. I've used whole wheat pre-made dough from trader joes and that has worked well too. For a healthier version, use half the cheese. A few variations I did: The Dough: Added a layer of chopped up fresh basil (or dry) on the dough before adding the mozzarella. Added mozzarella, gorgonzola, sprinkled red pepper flakes and drizzled with a little EVOO The Toppings: I did not peel the acorn squash skin. I thought it was tender enough to eat. Used baby arugula only because that's what the store had. Drizzled with a little EVOO on top of the arugula. Molto bene! I served this at a Silpada home party and it was a HUGE HIT with the women! They loved the sweet flavor of the squash with the gorganzola and the spicy arugala. It was the perfect finger food with a twist to serve in the afternoon. My kids and husband actually loved it too. I am going to serve it again in a couple of weeks at BUNKO. YUMMY! The instructions are easy to follow and cook the pizza to perfection. The flavors in this dish are distinct and to die for. The bite of the gorgonzola, as well as the spicy sweetness of the squash, and the pepperiness of the arugula create the perfect blend of flavors. I created a side dish which we now love using the squash recipe which is arranged on top of the arugula and topped with the gorgonzola. Not sure why it didn't work for us as pizza, but these flavors are wonderful. My boyfriend and I decided to make all 3 dishes featured on this episode. Neither of us had ever tried acorn squash and we thought the combination with arugula would be interesting. The flavors of the 2 cheeses with the acorn squash having a sweet touch of maple syrup was out of this world! My boyfriend's family owns a pizzeria and he tends to be picky with the pizza he eats. But this was definitely a winner. We can't wait for his family to try it out! But when I saw this made today on television, I decided to give it a try. I was amazed; it is great! I can't think of anything I'd add; the gorgonzola is what really makes it, and all of the flavors just blend together so well. I used micro-arugula, which I'd recommend if you can find it -- much easier to eat when on a pizza. I'm definitely making this again. Even my chef roommate was surprised and said it was a "winner!" |
