This recipe was great, especially using what I already has on hand at home. I liked the chunks of veggies...made it more substantial. Even my kids liked it.

I used about 1/2 cheddar and 1/2 mozzerella, since I had some to use up. Also, even though my potatoes were diced pretty finely, they took longer to cook than the recipe says (but I kinda figured they would). I put my broccoli in raw, too, because I don't like it mushy and overcooked. It cooked just enough in the last few minutes the soup was on--and still held up pretty well for leftovers. The soup also freezes well!




Good way to get your kids to eat their veggies!

This soup rated a 5 with all of my family. I did make a few minor changes, i.e., omitted the wine and increased the chicken broth by one cup, doubled the amount of broccoli (which I added uncooked), and used mild cheddar instead of the sharp. We liked the results and I can't imagine it being any better with the originally specified ingredients.
