Very Impressive! Easy, but very time consuming. Worth the effort. I didn't have fresh thyme, so I adjusted the amount and used dried. I didn't have cream sherry, so I used dry sherry. We loved it and will make it again.

It was delicious! It's had so many different flavors that blended tremundously well, I also used the hot Italian Sausage and that was perfect for a little kick and I'd like to thank Dana from TN for the ommelette idea, it tasted even better in the morning.

This was a fabulous mushroom soup! I mistakenly bought only 16 oz of baby portabella mushrooms but it was enough for a flavorful and delicious soup. This will definitely be a regular at our house. The entire family loved it!

I liked this recipe. It was very easy to make. I didn't know what cream sherry is. Didn't have sherry or cream sherry at home. So substituted it with some white wine (drinking quality though) and the soup came out great.

This was quite tasty, but very expensive considering the yield from the ingredients. Also... we were hoping for a more "creamy" soup. Most of this one's thickness came from pureeing the mushrooms. Very flavorful and enjoyable, though I don't know we'd make it again.

I went out on a web search today to find a mushroom soup recipe that would use up some mushrooms that were not long for this world. AM REALLY GLAD I TRIED THIS. Since there are only two of us, I divided everything (except the mushrooms) in 1/2. Deleted the blenderizing step and did not reserve any cooked mushrooms for garnish. So my 1/2 lb. of coarsely chopped mushrooms was enough. Subbed red onion for the shallots, Regina cooking sherry for the "cream" sherry. Used 2% milk and low-fat sour cream. Added a little extra flour and nutmeg. My husband could not get over how GOOD this was, and I enjoyed how SIMPLE it was! DO TRY IT!

This is really easy and tastes outstanding. You may be tempted to skip the sherry and shallots, but don't - it makes a big difference in the taste. It tastes almost nothing like what you get in a can, is so elegant yet easy. One of the best recipes I've come across in a long time. If you want your guests to ooh and aah over a dish, make this. You won't regret it!

Having tried many cream of mushroom soups in the past, I found this one to be the best. The shallots and sherry add a subtle taste to the soup I have not found in the others I have tried. This recipe goes into my "Save and Repeat" file !!!

This soup is fantastic! Used a food processor to make chopping easier and didn't bother to puree the soup after cooking (I prefer the chunkier texture). Very tasty and very easy.

I doubled the recipe when I made it and the entire thing ended up taking me over 3 hours to completely make. A lot of that time was inactive, but I spent a lot of time hovering waiting for the mushrooms to cook down, etc. When it was done, it was amazing - the best mushroom soup I have made. I made it a day in advance and the flavors came out a lot after sitting in the fridge overnight.
