When I made this a second time, I cut out a full pound of the meat and used an extra zucchini and a couple extra carrots. I also (the second time) used a prepackaged taco seasoning instead of messing with all of those spice. I added a layer of refried beans (about 2/3 can - warm up first so it spread easier onto the tortillas) as well to make up for the meat I omitted. These changes made this recipe MUCH healthier and just as delicious! I served this with sour cream and guacamole, too :) Yum-o, lol. I added a can of drained diced tomatoes and green chilies to it...topped it with lettuce, tomatoes and some sour cream. Definitely a keeper. It's not the healthiest food but at least has turkey instead of beef. My husband loved it too! It's a keeper for sure. I tried to cut fat where I could w/o sacrificng flavor: I used lean turkey (93%) and 2% mexican blend cheddar. For a little extra zip, I crumbled a bit of queso fresco with the cheese layers. It turned out so fabulous! I also whipped up a batch of guacamole to top this wonderful creation and put a dollop of light sour cream aside each serving along with the suggested scallions, tomatoes, and lettuce. This recipe was so quick it was ready before I was even ready to serve dinner! I let it rest for about 15 minutes and it was peeerfect! Let's see... our local grocery store had no zucchini, and I was about a pound short on the ground turkey- so I added a can of corn and one of black beans. I left out the corriander, since no one in my house likes it, and added some oregano instead. I think I used more tortillas than it called for. It turned out very good. If it was just me, I'd give it 4 stars, but this was the most I've seen my 2 year old eat in months! She even cleaned her plate. Therefore, it earns 5 stars from us. I made this once with the flour tortillas but everyone said they tasted "gummy" and "doughy" so the second time I used the corn tortillas...6 overlapping on each layer. Soooo much better with the corn tortillas. Tastes like a big layered tamale! It's a pretty simple meal but it's nice that you can sneak the veggies into it and no one is the wiser. I don't have any picky children to feed, but I do have a semi-picky husband and he had no idea. I added canned (rinsed and drained) black beans to the meat before making the layers. I also added 1 cup of Pace salsa to the meat and it made it tangy and good. You can substitute reduced fat cheese and it's still good. I, like one of the others, added chopped cilantro to the lettuce mixture. Because I was preparing for just myself I decided to cut the recipie in half. It turned out perfectly and the taste was wonderful. I invited a friend over on their way home to join and they thought it was great too. I personally think presentation wise it looks better in a circular dish (hence tortiallas being circular) but I believe that is easier when you scale down the recipie in size. It actually produces a lot of liquid so I would take note of that when adding the stock to the meat. I also created more layers to have more tortilla in the dish and it worked well. I first sauted chopped onions and garlic, then added ground turkey breast, grated yellow squash (for some reason there was no zucchini at my local store that day), grated carrots, and cilantro. Instead of using all the seasonings I also added a packet of taco seasoning mix. The cilantro gave it great flavor! I will definitely make this again.
