All I had to do was switch all the other flours, etc, to gluten free flour. I would recommend, based on my experience and others, to possibly fry the onions instead of baking them. The flavor of the dish was definitely delish! My onion mixture was fairly wet even though I used 6 Tbsp panko (2 didn't look like enough to me). It took a little longer than 30 minutes and I used tongs to toss them frequently and blended the browned onions with the less cooked ones. Next time I would recommend using a larger cookie sheet and spread out the onion mixture but you would have to watch them carefully. After they cooled I stored them in ziptop bag and found after 24 hours they were still crunchy. For the mushrooms, I used 6 oz portabella and 6 oz of a blend that had oyster and criminis. I think the sauce would be great on its own with chicken, fish, chops. You could increase the amount of garlic and adding a minced shallot could work. Would have gone with five stars, but it IS a lot of work, when buying all the canned stuff is a cinch. I had the opposite problem with the onions, b/c the turkey was in the oven at 350. They wouldn't crisp up at all. Finally the turkey was done, and I cranked up the temp, and they finally came around. I used 1.5 lb of fresh green beans, 8oz of white mushrooms, 8oz of cremini, two onions. Raw, it looked like it would never fit in the 2qt dish, but after everything cooked down, it fit perfectly. Next time, just to avoid having 2 cooks in the kitchen, I would boil the beans and make the sauce ahead of time. Then, the day of, I'd make the onions and put it all together in the casserole and bake. Overall, I'm very pleased with how they turned out. Next time I cook it I'm going to cook the green beans a little longer but other than that it was perfect. And the leftovers were even better in my opinion. The green bean and sauce part of this recipe are EXCELLENT - much better than the usual GB casserole. However, spare yourself the hour of work and just buy a can of the French's onions. My "homemade" onions came out partly soggy, partly burnt in a giant clump. I can't see how they would turn out any other way, as I followed the recipe to a T. I was a bit dubious to begin with, considering that on the show this was demo'd on, they never showed you the final result on the onions. I should have followed my gut. I loved everything about this recipe, and it does taste much better than the canned version. The only reason why I am not giving it 5 stars is because I had trouble with the onion part of the recipe. I followed the recipe to the letter. My onions came out "clumped together" and a bit bitter tasting. Maybe I used too many onions. I ditched my onions and did purchase the french fried version from the supermarket and added it to my fresh ingredients. Everybody at the Thanksgiving table loved it. I used different kinds of mushrooms for different flavors, which added some easy complexity to the dish. But I really have question a 475 degree oven for a half an hour. On my first try with the onions, they were charred in 10 minutes. The second try I did at 400 and they were charred in about 15 minutes. I would really love it if Alton would re-visit this portion of the recipie and either fix it or give far more detailed instructions. Well, this is the only one I'll make from now on. It was gone minutes after it was out of the oven! The savory topping, fresh mushrooms and sauce gives the casserole a richness you can't get (or miss) in canned soup. I doubled the recipe with no problem. Tip: avoid pre-sliced mushrooms, they're usually packaged dirty so any time saving is spent cleaning and they cook better dry. I also found that the baking time of 15 min was not nearly long enough which may have been b/c I had blanched the beans ahead of time and they were cold when I put them in the oven. I will definetly be using it in any other dishes I made that call for canned cream soup. Since many of my Thanksgiving recipes needed broth (and because I was trying to get away from processed canned stuff), I took the time to make a homemade vegetable broth and I think it shaped the flavor of my cream sauce nicely and would recommend it. I was a little skeptical about making the onions, so I skipped that and used 'the other stuff.' I did add a light sprinkling of freshly grated parmesan as a kicker, but it was only a dusting really. I also forgot to buy the half-and-half and substituted a can of a well-made organic cream of mushroom soup. This provided some decent body, but I did need to add a tad more flour into the mix. Turned out just fine, but I'll work with the half-and-half next time. This is a winner. The dish is not nearly as heavy as many green bean casseroles, but no less satisfying. The only thing I had difficulty with was the onion-breadcrumb topping. Despite frequent checking, I had a hard time getting the topping evenly browned. I burned it the first time and had to throw it away and do another batch of onions. I was careful, but some onions still burned a little and some were not browned well.
