The filling was yummy but the pie crust was terrible! It was incredibly dry and much of the pie crusts went to waste since they were difficult to re-roll out. I will make the filling again, but I will use it in enchiladas. A unique idea, but poor execution. I recommend rolling out the crust a bit thinner instead of cutting it straight from the package. I love crust, but it was a bit too bready for me. Otherwise, great! I had already cut out the circles, so I added a can of corn, more salsa and put the mixture into the bottom of a 9 X 13 pan and layered the pie crust on top. Just as other readers have mentioned, the mixture looks very dry. I'll probably eat my "casserole" with sour cream. The flavors are good, but I don't think the empanada idea worked well. Most other recipes I searched mentioned using phylo dough instead of pie crusts for those of you who don't like the recipe so doughy. That is incorrect most latin american countries have there own recipe for empanadas. Can people stop thinking that every hispanic thing comes from Mexico, it's offensive to Mexicans and other hispanics, we are all different. I would suggest no one use the pie crust as a way to make the empanadas because it will come out way too dry. Use yellow corn flower or white flower instead. |
