Tasted it on the spinich and it was AWESOME! I guess the addition of the spinach toned it down a bit. My guests thought it was the best spinach salad they ever had. I found it to be slightly bland and too runny so I added an additional teaspoon of mustard and more sugar, and salt. I would suggest tasting it before using to adjust to your liking. Next time I think I'll toss the bacon back into the dressing while on the burner to warm it back up - it wasn't as hot as I prefer. I also may add a thickener like a pinch of flour, because I like my warm bacon dressing a little thicker. WOW! The rendered fat (bacon) and the bacon bits was simply too greasy and too cold. Use a little oliveoil and less bacon bits. The white mushrooms add nothing to the recipe...which I would enjoy with the changes. Great idea to warm the spinach in the saucepan (stainless steel bowl on the show). I will look to adapt this recipe for our family...it basically is great...sorry for the initial low marks.
