However, the onions don't absorb much flavor while marinating and you can't really add it as a dressing when its done cooking. There's got to be a better way to make this.... I baked, covered with foil, for about 1 hour at 350 and ended up with delicious tender onions swimming an a lovely sweet and tangy sauce. They also look gorgeous! I spooned the sauce/glaze on top the parsnip puree (which was also from this episdoe) and it was just delicous! I agree that the cooking time was off but once I turned my oven to 350 and let the onions keep going they just kept getting better and better. First, the cooking time is way short; the onions don't soften in the given time. When they finally do, some of the honey/balsamic mixture will carmelize on the pan... and it turns into a tar-like substance. There are better things to do with cipollinis. I used the reduction in the pan to go over baby arugula to go on the plate with the short ribs and the puree....it was a hit. I will use this as a salad dressing in the future.
