I went ahead and added in the second anyway just to follow the recipe directions. The result was a watery and tasteless soup that needed so much more flavor. I added more salt and cheese but that didn't do it. Couldn't help but taste the flavor of hot water. So I sauteed more veggies and simmered it in chicken stock, added it into the "hot water" mix, pureed and had a perfect tasting soup. Like some of the other reviewers, I used chicken broth instead of water. I did use more veggies than recipe called for and substituted milk for the cream to cut back on calories. Also used a white sharp cheddar instead of gruyere. Some slight changes, but definately a solid basic recipe. I'm making it again tonight! Yum! I did make some changes though: 1)I doubled the amount of veggies 2)I used mostly chicken broth 3) The recipe calls for a lot of liquid. I used about 1.5 quart of liquid, and I did not use all of it when I put the soup in the blender; I like broccoli soup to be somewhat thick, so next time I make it I'll use about 1 quart.
