This recipe was so GOOD! My husband and I made it together for dinner one night and it was wonderful with crusty sourdough bread for dipping. Great as leftovers! The only thing we added was some extra seasonings right at the end, Jane's Mixed-Up Salt, to give it a little more flavor. Thumbs up Giada!

I tried this recipe with a few minor edits (I had all the fresh herbs except one) and the flavor is wonderful. I usually don't really like beef stew, but this was yummy, easy and quick.

This is so good, I've made it twice in the last month. I doubled the squash and halved the meat. It's healthier, less calories, but still fantastic! The marsala wine makes it have wonderful flavor and the butternut squash is a welcome change from potatoes.

This recipe was the best! I'm not a big squash fan so I substituted Sweet Potatoes and added more crushed red pepper. It was out of this world good. I'm making this one for the next family get together for sure.

I altered the recipe a bit. I thought beef on bone would make it more rich and flavorful so I added some short ribs. Next time I will make it using ONLY short ribs. It was great! I also substituted some of the beef stock for a can of Campbells beef consume and used a Lipton beefy onion soup packet. I transferred it all to a crock pot and cooked it on low for 4 hours. Careful, the squash can get too mushy if you cook it too long.

Yummy! This stew is so good! I added 1 T. of tomatoe paste to the stew about half way through cooking time. I recommend letting it simmer longer on the stove. It just gets better and better, the meat fell apart! This is also wonderful re-heated the next day, I just thinned it with a little extra beef broth.

Very different from the average meat and potatoes - the squash is a great alternative. The stew is slightly sweet but very delicious.

Giada does it again! After I saw her prepare this meal on her show, I immediately went out and bought the ingredients. I love the use of the butternut squash instead of potatoes...very tasty and very pretty! They are difficult to peel (at least for me), but worth it. I used red wine instead of the marsala, and it tasted divine. You could probably use dried herbs in this stew and it would taste good, but the fresh herby taste was what made this dish incredible to me! Very easy meal to prepare...make it tonight, you won't be disappointed!

This was the best stew I've ever had. My husband does not like stew at all and he loved it and even ate the leftovers the next day, which he never does! I will definately make this again.

Well, no surprise here: Giada did it again! The Beef and Butternut Squash Stew is amazing and falls in line with her signature requirements: 1) Sophisticated and elegant, but easy to make; 2) Healthy ingredient combinations; and 3)Deliciously unique (feel free to steal my message points, Giada!). As a mother, the icing on the cake for me was introducing a new vegetable that my 10 year-old son actually liked - butternut squash (he thought it tasted like a carrot and yam mixed together - whatever works!). I adored the depth of flavor the marsala wine gave the stew. I unfortunately purchased beef stew meat instead of cutting my own stew meat and it took an additional hour to cook to get tender. I also added a can of drained diced tomatoes and a slurry to thicken the stew at the end. I can't wait to try it with a better cut of meat. This was such an easy dish, it will definitely go into my file. Thanks, Giada!

I used sweet potatoes instead of the squash because I don't like squash. It tasted great. I love cooking with marsala, so anytime I can use it I'm happy.

This was a perfect winter dish for my family. We used acorn squash instead and yes, it needed to be thickened a bit. Other than that, we enjoyed it very much and will make it again!

It was "okay" not bad, not great; rosemary was a tad strong; overall I'm indifferent. I've had better tasting stews with similar ingredients. I would reccomend if you have the ingredients kicking around

I actually just made this in the crockpot. I didn't pre-cook anything or add the oil, I just put it all in the crockpot and let it cook all day on low while I was at work. It needed a little thickening so I thickened it with flour and water right in the crockpot. It was so great. My husband, who insists he hates squash, loved it too.

I thought the butternut squash tasted even better than potatoes in this recipe. Wine and beef broth gave this a great flavor - as did the sundried tomatoes which added a bit of a kick. I combined this recipe with Barefoot Contessa's Potato Fennel Gratin - and both received rave reviews from husband, friend, sister and brother-in-law.

This recipe was a hit with my family. The flavor of the broth was sensational. I served this stew over wide egg noodles. The only thing I might add next time would be a can of drained stewed tomatoes. It seemed like it could use another ingredient to go along with the squash and meat.
