Fantastic side dish -- important note about ISRAELI couscous

This dish is excellent, and I like the fact that you can make it ahead of time. I agree with the other raters that chicken broth adds a nice flavor, and adding cut up chicken can create a nice one dish dinner. It is also a nice side dish (without the chicken)for grilled wild tuna or salmon. But just FYI- Israeli couscous is NOT in any way traditional couscous-- it is a PASTA. The texture is bigger, round and slightly chewy. Traditional couscous probably has a slightly higher nutritional value (more fiber I think) and you MIGHT be able to substitute traditional couscous, I don't know. But the flavor and texture would be MUCH DIFFERENT that what I think Flay is aiming for in this recipe. Iraeli couscous is a little more exotic-and harder to find. However Whole Foods now carries it in their own brand (365)so I guess that means it is becoming more mainstream. But do realize that it is PASTA and not whole grain but rather made from refined white flour. Absolutely delicious nonetheless. Enjoy!

I thought this was just superb. It was fresh, easy, and delicious! I used chicken stock instead of veggie stock, whole wheat couscous instead of regular, added a bit of grilled chicken, and cut the recipe in half. It made at least four servings, even cut in half! I will make this again for sure. It comes highly recommended for a healthy, delicious side or meal.

I made this for a party--everyone loved it--and there was plenty to go around. It does make quite a bit, but it keeps for a while and it's nice and inexpensive.

This is a great recipe! A couple of recomendations that make it a 5. 1. This feeds 10-12 people! 2. 1 lb cous cous to 4 cups vegetable broth (no draining needed)- Cook it like you would rice (it doesn't take as long, though). 3. Skip the marinade, just pour the dressing on the cut grilled veggies - they soak it right up & the flavor is better. 4. Add some shredded chicken 5. Crumble some feta cheese on top 6. Serve with some crunchy/seeded/nutty crackers for good texture *I use the flat seeded crackers from Trader Joe's. 7. Add more mustard to the dressing.

This salad really let me showcase some great produce from the farmer's market and, as there was nothing in it to spoil, I was able to make it up earlier in the day and let it sit at room temperature until it was time for dinner. I served it at a "Mediterranean"-themed dinner party with gyros, tzatziki, hummus, and Sangria and it was a big hit. One comment would be I found this to make a very large amount of salad so you might consider cutting the recipe in half if you have a smaller family or less guests (or don't want to eat it every night for a week).

I followed the recipe exactly, except I grilled my veggies in my George Foreman and collected the juices and added to the couscous. Everyone loved it! I have made this dish, thrice already for different parties and it never fails to bring me compliments.

I loved this!! I had been craving a couscous I had at the Mesa Grill years ago. I hoped this was similar and it was just as great. I used the fresh veggies I had on hand and it was so refreshing and flavorfull.

I made this recipie for a potluck dinner and it turned out great. It was a dish that everyone could enjoy, and a great way to introduce people to couscous. I like the fact that it's a very flexible recipe, in the sense that you can add any grilled veggies you like. It's also very quick and easy to make.

This has become our favorite summer time salad! The fresh summer vegetables are delicious in the marinade and the texture and flavor of all of it combined is the best. I added the juices from the grilled vegetables to the dressing which added a little extra. Try this - you won't be disappointed!

Easy to make. Tasty marinade for the vegetables. Nice touch using it with the couscous. Added marinated and grilled sweet onions. Nice side dish or vegan maon meal.
