Ingredients

  • 2 cups buttermilk
  • 1/2 cup old-fashioned rolled oats
  • 2/3 cup whole-wheat flour
  • 2/3 cup all-purpose flour
  • 1/4 cup toasted wheat germ or cornmeal
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs, lightly beaten
  • 1/4 cup packed brown sugar
  • 1 tablespoon canola oil
  • 2 teaspoons vanilla extract

Directions

Mix buttermilk and oats in a medium bowl; let stand for 15 minutes.

Whisk whole-wheat flour, all-purpose flour, wheat germ (or cornmeal), baking powder, baking soda, salt and cinnamon in a large bowl.

Stir eggs, sugar, oil and vanilla into the oat mixture. Add the wet ingredients to the dry ingredients; mix with a rubber spatula just until moistened.

Coat a waffle iron with cooking spray and preheat. Spoon in enough batter to cover three-fourths of the surface (about 2/3 cup for an 8-by-8-inch waffle iron). Cook until waffles are crisp and golden brown, 4 to 5 minutes. Repeat with remaining batter.

    As a weight watchers member, looking for a healthy low point breakfast that my whole family will eat, these are definatley... it!! I made the batter the night before and refridgerated it so that all i had to do was spoon it into the iron in the morning. My girls loved it, we topped them with an apple sauce mix made with sugar free applesauce, peanut butter, marshmellow paste, fat free cream cheese and banana's blended together.     Made these waffles this morning. I didn't have buttermilk, so I put 2 T of white vinegar in a large glass measuring pitcher... and then filled it to the 2 C line with milk and let it sit for 5 mins before adding the oats. It worked like a charm! These waffles came out hearty, nutty and delicious, with just the right amount of cinnamon flavor. They were crispy on the outside and moist and tender on the inside (I used a Belgian waffle maker). We topped them with strawberries and whipped cream and they were divine. This was a great way to get whole grains in my kids. This is will be our "go-to" recipe for waffles from now on.Read more

    I have been looking for healthy makeovers to my family's favorite foods. I found this recipe on the eating well website so I... bought a waffle maker to try it. It was tasty without needing syrup. If you need something sweet to go with these try fresh fruit instead of heavy sugary syrup. Fresh strawberries are delicious with these!! The best part is for each serving (2 waffles) there are only 188 calories and 4 grams of fat! Some whole grain, high fiber cereals have more carbs than these waffles.You cannot beat that!! Read more

    This is a great recipe for healthy waffles! It can easily be made vegan, too: -substitute the buttermilk with 1 c... soymilk + 1T apple cider vinegar for every cup buttermilk -substitute egg with Ener-G egg replacer, or for a healthier version, 1 egg = 1T ground flax seeds beat with 3T hot water. Adds a nice flax taste too! I only used the equivalent of 1 egg though (not 2 as recipe calls for) because flax is very gummy and can make the batter quite dense. Delicious!!Read more

    These were wonderful waffles. Everyone in the house enjoyed them including two five year olds and my nine month old. I... followed the recipe exactly except I did not have buttermilk so I did the milk with one TBSP vinegar substite. I will definately make again.
