Shrimp Po' Boy with Creole Mayo

Cooked shrimp, about 12 to 14 ounces
1 cup lettuce, shredded
1/4 cup mayonnaise
2 tablespoons diced oil-packed sun-dried tomatoes
1 teaspoon Creole seasoning
4 long sandwich rolls
In a large bowl, combine shrimp, lettuce, mayonnaise, sun-dried tomatoes, and Creole seasoning with a spoon. Mix well. Spoon mixture onto rolls and serve immediately.
